Today we are smoking our Birria on the OK Joe Bronco Pro! I had first seen this video that ‪@CookinWidKunchi‬ dropped on TikTok and got some inspiration from that, did some research on other traditional methods and tried to incorporate that into it too.
If you seen something that I did wrong or could have improved on please let me know! I think this cook turned out good, but how can I make it great?
I most definitely pronounced Birria in the most unappealing way but hey, don't judge me too hard.

Brother the beauty about bbq is that the combinations are endless! If you have a process that works for you stick with it and fine tune your process! Don’t worry about what people suggest. That’s “their” opinion. They’re only sharing with you how they do it. Do what you like brother, at the end of the cook everybody is going to enjoy your cook bro! This looks fire youngster keep up the great deliciousness bro!

Burying your wood chunks towards the bottom of the charcoal basket will help prevent the wood from causing higher temp spikes. When it's buried the wood will smoulder and smoke more without catching fire.

I heard somewhere that you actually want the wood to ignite instead of smolder, I will have to do some experiments to see though!

I think it’s a good hobby to pick up! Fun, learn a few new tricks, and you usually end up with something good you can eat!

That birria looks amazing. Ive ate birria all my life but never tried it smoked and i can only imagine the bold flavor. You can make birria ramen with the left overs you should look into it.

Yes I actually made that with the leftovers but forgot to make a video with it. The smoke actually gave it a nice pizzazz, next I think some smoked salsa might be an interesting idea… 🤔

BTW. I find with my KJ that often time using one piece of wood works well. At first I was coming from a pellet type smoker and it was a big difference how much flavor you can get with allot less wood it seems from one of these type of smokers. Tasted cleaner as well for some reason. But love seeing the next generation getting their cook on.

Yeah, I came from a small electric smoker that I had to use, what seemed like, a lot of wood to get some flavor on there so learning to fine tune that more. I think this is an expensive hobby sure, but I always get something delicious to eat at the end! 😂

Yeah I think my friend told me Birria is traditionally made with goat way back when but nowadays you can make it with any type of meat
