This is definitely one of the easiest things to prepare and smoke, and is equally impressive for your friends and family! Lamb can also be an easy meat to over cook if you aren't careful, and will definitely be dry and tough if you let it go too long. Optimal internal temperature is between 135 -145 (tops).
Ingredients:
1. Boneless leg of lamb (this one was actually Halal)
2. Olive oil - about a cup
3. Garlic - one whole head
4. Celery salt - one tablespoon
5. Kosher salt - two tablespoons
6. Ground black pepper - one tablespoon
7. Dried basil leaves - one tablespoon
8. Thyme - one tablespoon
9. Rosemary - one tablespoon
