Smoked Disney Turkey Legs on the Pit Barrel Cooker with Vinegar Mop Sauce

In today’s recipe I'll show you how to make Disney “style” Turkey Legs, but we are adding a Vinegar Mop and cooking on the Pit Barrel Cooker.
We will start by brining the turkey legs overnight. The next day, we’ll season the turkey and get the smoke going!
Turkey Leg Brine Ingredients
• 5 teaspoons Kosher Salt
• 1 teaspoon Prague Powder #1
• 5 tablespoons dark brown sugar
• 2 cups water
Protein Ingredients
• 3 turkey legs, total weight 2.46 lbs
• 2 teaspoons Sucklebusters Competition BBQ Rub, more info here www.armadillopepper.com/produ...
• 3-5 tablespoons Fat Bastard Pepperjack Vinegar-Mop Sauce, more info here www.armadillopepper.com/produ...

Procedure
1. Heat 2 cups water (does not need to boil) and mix brine ingredients in a pot or Ziploc bag until the sugar, Prague Powder #1 and salt are dissolved. Heating the water helps the salt, sugar and Prague Powder #1 dissolve.
2. Let the brine cool before adding the turkey legs. You can refrigerate the brine for about 30 minutes to speed up the process.
3. Place the turkey in the brine and refrigerate overnight.
4. The next day remove the turkey legs from the brine and pat dry with paper towels.
5. Season turkey thighs with the Sucklebusters Competition BBQ Rub (or your favorite turkey seasoning).
6. Cook the turkey legs to 155 degrees F (approximately 1 hour) and then brush on the Pepperjack Vinegar Mop.
7. Cook until final temperature is 175 degrees F (approximately 20 to 30 minutes longer).
8. Remove from the Pit Barrel Cooker and rest for 15 minutes before serving.
These were some of the best smoked turkey legs that I've ever made.

Those are some really good looking Turkey legs nice color juicy and love the smoke ring. Not sticking to the recipe is the amazing thing about creativity always something amazing.

I had never hear of Disney legs but with the brine and the rub they would be very tasty especially with the extra carmalized FB sauce

Hey Jeff, great video! I am actually going to use you method of this recipe in the next two weeks. Question for you...I have 8 turkey legs 2.4 pounds per package (2 per pack). How much Prague Powder should I use. Also, I am using the Masterbuilt. Thanks!

I bought it at Amazon. It is a curing salt and flavor enhancer. It's the same stuff that gives Corned Beef that "pink" color.

It is also used extensively in sausage making. If you don't know where to find it (like anything else) try ebay. One time, just for grins, I put shrunken human head in their search box ... yes, they have those too.

Its pink powder and , oddly enough, It says prague powder on the bag. It is a curing salt and flavor enhancer, which has already been said. I can be bought from Amazon, ebay, or from many purveyors of sausage making supplies. What are you after, the exact chemical formula? If you aren't following along to this point, I can't believe you're going to dig out your Mr. Wizard set and make your own anyway.

If you don't know what curing salts are, do NOT use them. Misuse will seriously sicken or kill you.......
