Disney Style Smoked Turkey Legs

Have you ever seen folks at theme parks walking around chowing down on huge turkey drumsticks, and thought! I want one of those? Please allow me to show you how to make some! All you need is:
2 large turkey drumsticks
1 teaspoon of pink curing salt
2 teaspoons of kosher salt (non-iodized salt)
3 tablespoons of brown sugar
1 cup of warm water.
Mix all these ingredients and brine the turkey overnight in the fridge.
The next day fire up your smoker, rinse the meat off and dry with a paper towel. and smoke them until you reach an internal temperature of 165-170 degrees. Grab a beer and chow down!

You hit it on the head......Just Like Ham! Not only are they great to chow down on.......but awesome used in soups and southern style collard recipes. Tee Dawg, Last year I ordered from Publix and went to the trouble of brining, curing, smoking. They were good, but very challenging to work with that much raw poultry at one time. This year, I ordered pre-smoked drumsticks from the Neighborhood Market. I brought my smoker to school and let them slow cook for another 3-4 hours till they were fall off the bone tender. The drums averaged 2 pounds a piece. Almost everyone shared or took some home. Happy Thanksgiving! 🍁

Would’ve never thought to cure them first. They looked amazing!! I normally fill up on sweets at Disney, never had their drum sticks but I’m sure yours were better. Thanks for sharing 😃

Smoked Turkey Legs. I'm in, one of few times, you can eat like a Beast. Yes Renaissance Festivals. Never thought about them being cured. Something different. Nicely Done. Thanks for sharing. 😎.

Lager is my go to - so inam sure i would have liked it The drumsticks looks great too. I think i need to get some next week. We are traveling south, and there is a turkey industry close to where we have our place :)

I have been smoking turkey like that since I was a kid. That was the 2nd thing that my grandfather taught me to smoke, "just like in the old country" he used to say. Only difference, I cure for a couple of days. It sure is good stuff. Nicely done. RTFO!!! GB

I'm not cool enough to have ever seen Disney, but being from Texas, I've had some of the most humongous turkey legs ever seen! I love em' slow smoked to come right off the bone, and then wrapped in bacon and deep fried quickly, and then dipped in Dr. Pepper wing sauce. haha. OMG it does look like ham! YES! ham of the turkey! Just need a giant roast elotes (corn, mayo, chili, limon, etc) with that...damn!

You just made some Turkey Ham or something. It does look very good! Okay, you know I always have wanted a PBC like you used there. I bought a trash can cooker called the Po' Man Charcoal Grill.... Today I gave it a burn to burn off any bad oils etc. I will cook on it soon. It is smaller and trashier, but so am I.

I used the Pit Barrel Cooker and it runs at around 275 degrees. This took 3 hours. Thanks for watching!

Meathead (From amazingribs.com) tested the ways to get smoke to adhere to a surface and by comparison cold and wet attracted the most smoke. I thought it would have been the oil because it is sticky, but no.

The Pit Barrel runs at about 265-285 degrees and it took 2 1/2 hours to get the turkey up to an internal temp os 175 degrees. The only temp that is inportant here is the internal temp of the meat but if yu want a good smoke flavor use a smoker and go for at least 2 hours.

The Root Boy Cooks ! So it’s more about the color for the salt purpose? It did seem like a lot of salt for a couple of drum sticks that one or two people would consume. Not use to smoking or cooking turkey legs so this is more out of curiosity opposed to anything else. Just curious man, love the vids and the channel by the way.

Brooks Norris “Curing is any of various food preservation and flavoring processes of foods such as meat, fish and vegetables, by the addition of salt, with the aim of drawing moisture out of the food by the process of osmosis. Because curing increases the solute concentration in the food and hence decreases its water potential, the food becomes inhospitable for the microbe growth that causes food spoilage.” The salt is needed for the process. I’m not reading too deep on wiki tonight but I reckon it’s like reverse osmosis. That reduction in water content may also play a role in the texture of the meat making it easier to hold the bone and gnaw on, as opposed to a traditional turkey drumstick, that it cooked slowly, tends to fall off the bone.

We ordered some from a very high end smoke house once. They were ok, but they didn't look as good yours, they didnt taste very smoky like a ham, and they weren't nice and juicy like yours. You've got the touch, Sal. You should open a restaurant. God bless, T
