Smoked Italian Meatballs on the Pit Boss Pro Series 1150
1lb lean ground beef
1lb ground pork
1lb ground veal
5-6 cloves chopped garlic
1 med yellow onion finely diced
1/3 cup chopped fresh parsley
3-4 fresh basil leaves chopped
1/2 cup freshly grated Parmigiano-reggiano
3 lg eggs
1/2 cup Italian style bread crumbs
1 Tbsp salt
1 Tbsp pepper
1 tsp dried oregano
1 tsp dried basil
1 tsp Italian seasoning
1 tsp red chili flakes
Mix the bread crumbs, egg, parsley, basil, Parmigiano-reggiano, spices, onion and garlic together then add to meat mixture.
Combine, being careful not to over mix. Roll into large balls. (A little bigger than golf balls)
Place in preheated smoker at 180° F for 25-30 mins, then up the temperature to 350°, cooking until they reach 160° internal temp.
