Or nothing wrong it even making the others pay your share of the rent if you have to take on all the risk and responsibility.. going to the extreme but hey way i see it, if you are paying a reasonable market rate for the accomodation, it just seems like the guy who has the lease did all the leg work and has to manage all bills and risk or if any house mate decides they just want to bail, then who covers the rent shortfall? i wont see any of the other housemates jumping in to pay an extra $100 p/w until a new person if found? if i had say 3 housmates, Id charge them $50 extra if I can to cover for the rent if something happens and a room is vacant. Lets say if 3 all leave in a short time, that means I am paying $800p/w.... just sayin.
As a West Indian, I am accustomed to braised oxtails. This is the first I've come across such an idea as smoked 'tails. They came out beautifully. I would slaughter that dish. Great job sir
Malcom, I've always cooked oxtails in the crockpot. for one reason it's simple.But for the extra worked you put in and I entrust in you I have to try it your way. If I had to choose one dish to eat everyday for the rest of my life, it would be oxtail. I’ve made it a hundred times on the stovetop but this is one of the BEST preps of this dish I’ve ever seen. ⭐️⭐️⭐️⭐️⭐️ Properly cooked oxtail tastes better than the best ribeye you’ve ever had, man. My wife is Jamaican and ox tails is her favorite food so I'm going to have to show her this recipe. It might be hard to compete with her 'how mama used to make it' recipe tho
When I was growing up, nobody but country folks, especially Black folks cooked ox tails. We had them several times a month because they were inexpensive. Now....they're a special occasion meat because they're so damn expensive, especially here in the NY-NJ areas.
@@colorfulcodes Well, if you cooked them from scratch where I live they cost 5.99-8.99 per pound. In San Diego they're about $14-$18 per plate & twice that much at a fancy sit down restaurant $28-$36.

I made this and it was a big hit. The flavor is so rich and delicious. I made this and finished it in the oven. My neighbors and everyone went crazy for it. I didn't throw away the veggies they went great with the gravy. I'm from the Caribbean and this isn't how we do oxtails there but when I tell you THESE ARE THE BEST OXTAILS I'VE EVER TASTED MY WHOLE LIFE. I'll never make oxtails any other way again. Just made these yesterday. Mmm good! My wife never had oxtails before & she really liked these. Make these if you can. No dutch oven or cast iron pan needed. I just put them in a doubled foil baking tray. I kept the carrots, onion & celery in the dish. Just skimmed the fat. This recipe is a winner!
Do you have any local Asian grocery stores? Stuff like this is usually MUCH cheaper for me at Asian markets than it is at my local grocery store or butcher.
Finally. A right recipe for ex tail. A tip, if you put that sauce on the stove on a good simmer, half on and half off of the burner, it forces the fat to migrate to the non-working side so its easier to skim. Keep skimming until it's all out and you can make an awesome glaze which has an amazing texture and flavor. The mouth feel is smooth, any fat just runs it. You'll be spoiled once you've had it. You can find the detailed instructions on how to make a proper glaze in a braised short rib video. Trust me, as much effort and love as you put into this, its worth it. :)

Smoking the oxtails is so much easier than browning them in oil with browning liquid! I season mine with the traditional Barbados seasoning then I place them on the smoker for about three hours. Then I place them in a braising liquid to get them tender for another 2-3 hours. I got the smoking idea from you and that is soooooo much better!

Here in Germany we traditionall use ox for soup... Ochsenschwanzsuppe.. Never had it bbq style. After watching this i really have to try it soon. Good Job man!!

I have cooked Ox Tails many many times and they are delicious. I have never seen them smoked this way! Bravo on your ingenuity! I am going to have to try this. Fortunately I have a Drum smoker!! Great video!!

Hello Malcom, this video is a yr old. I just got a new smoker and wanted to try cooking oxtails differently from the way I normally cook them which is with a slow cooker with cabbage. I came to You Tube, searched for"smoked oxtails" looked at the pics of what populated and chose the video of the oxtails that looked the most scrumptious which was yours. I am planning on making these in 3 days and if they come out ANYTHING like yours did I'm sure my family and I will LOVE them. I will come back with comments when I have made these. Funny fact ox tails used to be very cheap. They were considered a portion of the cow that people didn’t want once it was butchered. Well you see what happens when people start cooking things that others don’t want you get recipes like this and then everybody wants some ox tails. Now they are expensive.

Made this almost verbatim this week, with the exception of using Meat Church's rub instead of Malcom's. Also I kept the veggies in the sauce instead of straining them out. Paired it with some coconut rice along with the Serious Eats recipe for collard greens. Absolutely phenomenal. While I really appreciate the more traditional Jamaican/West Indies way of cooking oxtail, this recipe blew everyone's minds that had the pleasure of tasting it. The amount of smoke was perfect. It's so rich that you need something to cut through the beef, and the vinegary collards complemented the dish perfectly. I highly recommend trying this recipe at least once.
Hmm - the butcher already trimmed them, Fat adds flavor and energy - leave it on... by the way I was brought up on Oxtail at the time it was a cheap cut and I enjoyed it. It used to be a cut for the poor.
Most of us only have one smoker, so we would do this on whatever we have. I'm curious if you have some rationale for the smokers you use for each recipe. Is it merely dealers choice or is the smoker you use better for the type of cook you are doing?
You know, some smokers/grills are better for different recipes (one example is the drum makes bacon get a little crispier than it does on other smokers) ... but you really can do any recipe on any smoke if you know how to control your fire and temp. I really just try to rotate the grills I use so things don't get boring. And I learn something new about each smoker every time I cook on it, so I like that.

Many makers of drum smokers are out there ready to buy, but they're expensive. The cheapest is to make your own. Google "Ugly Drum Smoker BBQ-Brethren" for instructions. Buying everything I needed new, including the drum itself, I spent less than $100USD to build mine and it cooks like something I spent 10x that amount on.
Let me bless y'all....after smoking them, throw em in the pressure cooker for about an hour instead of back on the grill for nearly 3hrs....it's a wrap!!!!

I make mine in a crock pot similar spices low and slow, but I prefer a creamy mash potato with my oxtail! You made me real hungry there Malcom !! Oxtail is some of the finest tasting meats out there, must be cooked low and slow minimal 3-4 hours , get you sum Oxtail today !!
