The Secret to Mouthwatering Oxtails

Buying oxtails in whole, bulk sealed packages not only allows us to explore some cost-saving opportunities but also provides us with the chance to get creative in the kitchen. If you're lucky, the butcher might even give you a special deal since they require minimal labor to prepare.
After getting our hands on these gorgeous oxtails, the real magic begins. Starting with a light coating of olive oil, we enhance the flavors with Kingsford No Salt seasoning. This gives us complete control over the saltiness, allowing us to tailor the taste to our personal preference. But that's not all! As an added treat, we're throwing in some beef shanks, cooked in the same mouthwatering fashion.
Now, let's talk about the cooking process. I preheated the smoker to a perfect 245 degrees F, ensuring optimal cooking conditions. Placing the seasoned meat in a pan, I let it cook until the internal temperature reached approximately 165 degrees F. After this, I gave it a well-deserved rest for about thirty minutes, a time in which I heated up some charcoal for the grill.
To add an extra layer of deliciousness, I then seared the outside of the meat on direct heat, achieving a crispy, flavorful crust while preserving the juicy tenderness inside. The shanks turned out pretty good, but let me tell you, the oxtails stole the show, exceeding my wildest expectations. From the tantalizingly crisp fat on the outer layer to the melt-in-your-mouth perfection at the center, these oxtails were a true ten out of ten.
