Thank you! Less internal temperature and more about the falling apart texture. Has happened at different times and temps for me with the oxtails so you just have to check them. Cheers!

yeah lets run my smoker for 8 hours only to cook dinner in aluminum foil. Big brain shit right here

You could definitely finish them in the oven if you prefer. For me, once the KJ is up to low temp, it barely uses any charcoal. It’s very efficient so easier to keep that going than running the oven.
