Leave the membrane on. Take a sharp knife and slice the membrane several times making a X pattern. Cook as you normally would, you never know it’s there. It just skips a step.
Of course! If you can hold the temp close to 250 you shouldn't have a problem! Just make sure you keep an eye on your charcoal level, because with a regular charcoal grill, you may have to add to it as the cook goes on to keep the heat up.
