Smoked salmon brine is the key to perfectly moist, tender smoked fish. This recipe and video explain how to make and use salmon brine!

Ingredients
3 lbs salmon (skin on)
Smoked Salmon Brine
1/3 cup sugar (or brown sugar)
1/4 cup kosher salt
2 cups soy sauce
1 1/2 cups water
1 cup dry white wine
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp red pepper flakes (or freshly ground black pepper)
1 tsp Tabasco sauce (or hot sauce of choice)
Instructions
Mix together the sugar, kosher salt, soy sauce, water, wine, onion and garlic powders, pepper and tabasco sauce in a bowl with a whisk to incorporate thoroughly and dissolve the sugar and salt.
In a 13x9" pan pour a little of the brine in the bottom of the pan. Next place the salmon to be smoked in the pan and pour the balance of the brine over the salmon to cover. Refrigerate for 8 hours.

I have done Smoke Salmon for many years and this was a recipe that I thought was so different I had to try. I will always use this as a base recipe as it was amazing. never forget to adjust as needed to you needs and taste buds.

Hey Kevin. This looks absolutely delicious. I made the same brine, minus the wine because I didn't have it on hand, and I also added a korean spicy marinade. Just a little bit. I'm having an issue where I don't think my fish is very...stiff? It still seems rather soft. It's been sitting in the brine for 27 hours. I just added more salt and brown sugar. Any advice? Otherwise, I'm just letting it sit even longer until I suppose it stiffens up.

Hey there Tony! There could be several reasons the brined salmon isn't "stiff" as you say... It could depend on the thickness of the salmon, if there is skin on it still and the size/length come to mind. I would not worry too much about it, the time brined is what's important and the texture will be as it should after smoking, too.

@@KevinIsCooking Thank you for your response. I've been having it brine for about 36 hours now lol. Alright, I was just a little nervous that it wasn't ready. This is the same process as curing, right? I'm quite the amateur cook, so a lot to learn. Is it possible to take a few bites out of this before hot-smoking it?

@@tonys.8667 Brining and curing are too different processes. Both curing and brining work through a process called osmosis, though with different results. While a cure simply removes water from cells to prevent bacterial growth, a brine draws even more water back in, resulting in moist, juicy foods. @@KevinIsCooking ahhh, I see. That makes sense and probably why I was expecting a different result. My fault for not putting in the time to research. Either way, I'm sure it will be delicious! Last question and I will leave you be for now ...haha...is it okay I have been having my salmon sitting in the brine for this long?

If I regular Soy sauce, can I omit the additional salt?

What additional salt? The salt listed is necessary for the brine itself. Feel free to use low sodium soy sauce if you like, its for flavor. Hope this helps.

@@KevinIsCooking yeah, the separately added salt. I prefer regular Soy, and even slightly saltier soup Soy, so I was wondering if that would be sufficient to develop the brine.

Does the amount of condiments change on the weight of salmon ?

Depends on how much more really. If it's a pound or two I wouldn't worry, if it's 5-6 lbs I would probable double

You add salt to low sodium soy sauce🤦. Just use regular soy sauce and you don't have to add any salt to it.
