You don’t want the smoke to be overbearing but at the same time they don’t take long to cook so you don’t really have to worry about it being overbearing. I’ve had them with hickory, as well as the Pit Boss Competition Blend and the Bear Mountain Gourmet Blend. Delicious every time! You can try fruitwood but just make sure you’re not getting a ton of smoke on them because I’d imagine it’d be a little funky with fruitwood + seafood, but that’s just a thought! For this type of cook, yes. I would say that it's situational because when you cook in a vertical you have to pay attention to what is dripping down onto what. Plus, the verticals aren't always as deep as the other models so fitting longer pieces of meat might be a bit tricky.
Potatoes took about 1.5 hours, but would have been quicker if they had been blanched ahead of time. Kielbasa took about 45 minutes. Crab legs took 30 minutes. Shrimp took about 15 minutes. Hope that helps - thanks for watching!
