A couple things: 1) It's not the 'blood' in meat that makes it gamey. There is not blood in meat. Blood is in blood vessels. If you're getting red out of meat itself, that's myoglobin, a protein within the muscle. It's the red stuff on your plate from a steak. 2) The gamey taste comes from poorly trimmed meat. Leaving the membrane or other connective tissues on the meat gives it an off taste and poor bite quality, since it is very tough to chew through.

Jack, if you want deer that's not gamey the best thing I can tell you is ice it as soon as humanly possible. after you gut it stuff a bag of ice in the cavity, pack more ice around it and don't uncover it untill you hand it over to the butcher. Then the water trick. Does wonders. Most of the gamey taste comes from... how to put this politely... overly aged blood in the deer. Keeping it cold before its broken down does wonders.

+Radar Really Another huge thing is try not to kill a deer that has been on a full tilt run. We always cut the throat, bleed them out, gut them, cool them as fast as possible. Skin them that night wrap them in muslin and hang them for about 5-7 days when it's cold out. You can quarter them and pack them in coolers too.

Do you soak your beef steaks in water too?........ Its not necessary to soak the venison, that's why we hunt deer is for the meat and taste. Love my corn feed Illinois deer 🤤

Just remove the silver skin and conective tissue and you remove the game flavor....never soak in anything but a drink only...game meat should taste like game meat not beef

Another way to do it is slice it in to small slices batter it and then fry it so good

man we got our deer on saturday and the straps were on our plates sunday. don't need to soak it in water that "gamey" is just the flavor of natural not proceed. but to each his own love the videos keep it up

just salted and peppered and let sit for about 30 minutes. then throw on the grill and drizzle with a little lemon juice. i like to keep it simple and quick. but i definitely love your shows. give me more ideas and expands my range.

Don't soak the meat in water, just go to your marinade. The reason it looks grey, snotty, gross and tasteless when it comes out of the water after two days is because it is gross and tasteless.

Buy beef if you want the venison taste out of the venison. Note...If you want to mellow the taste hang the deer (hide off) below 40 degrees for 10 days.

You haven't had a deer from a state where they live on corn. Here in Illinois, the meat falls off the bone, we have some of the best. Matter of fact, we have to go though a lottery to even hunt them. They are THAT good! They get a 8- 10 pt rack within 3 yrs of life.

I would have treated it like a very lean pork loin. inject it and then rub it. I'm not a fan of marinades unless it's for a couple days so it really soaks in. I prefer to inject some I know it penetrated.

I am so glad that you mentioned about the blood. You don't have to use vinegar or buttermilk. just plain old water. Trimming the silver skin, tendons and other connective tissues help a ton. Looks great dude

Properly processed Venison doesn't taste gamey. It taste like real meat that isn't fed sugar and candy. People Eating garbage meet for too long now. Soakinh venison water is nuts. People just don't know what their doing.

in new to venison cooking husband is to he is a griller so when it is at 140 temp it is done he is going to try a backstrap from his deer fresh sunday and i gather soaking for 2 days ahead will help as well

your deer tastes gamey because you didn't take care of properly. Soaking is not necessary. Never had a gamey animal that we processed.

Stuff it with jalapenos and cream cheese. Then take some thick cut bacon and wrap it. Throw it on a smoker or oven.

Milk does a better job of getting the blood out! Place deer meat in large enough ziploc bag and add enough milk to cover the meat, refrigerate over night and repeat one more time! Then if you want, marinade in what ever marinade you wish to use!! The milk helps tenderize the meat!!

+Bayou Chilehead Soak them in salt water, we've done that for many, many years, it basically works the same as a brine on a bird, it opens up the cells of the meat.

Keep your temp around 225-250 if you can and you figure an hour and half per pound. Take off when the internal temp reaches about 135-140. Wrap and let rest for about 30 minutes. Everyone pretty much cooks differently but smoking you don't want to stay over 250.

Venison is a very lean meat, so you should be careful how long you cook it. I would have gone with a wet marinade. I like a homemade teriyaki that works well or a sauerbraten recipe. As far as gaminess goes, there are a few factors. What did the deer eat? The animal's diet affects taste as does the sex of the animal and how it was taken. Gut shoot a deer and have it run off is no fun and will affect taste. Kill it cleanly and the results are much better. Also, either dress the deer immediately or quarter it immediately. The meat should be cooled down as quickly as possible.

no interest in seeing you miss a deer,all for a new hunter into the sport HOWEVER the GAMINESS is mostly connected to leaving the tallow on the meat. the bloody water is of far less concern than the way that the animal is handled from the moment that the trigger is pulled until it lands on your plate. Proccessing and game care is the most important step of all so if that is not followed I cannot in good conscious listen to your advice on cooking the same game. I have nothing against your idea's but you must first KNOW the meat you are promoting

You ruined that deer meat I would never pull all the blood out of mine. Weed near me 7 days a week over here and lower Alabama the best way to eat a backstrap is stuffed and wrapped on the smoker

+speedy kwt smoked meat is pink. Venison is normall pink and the termperature was 140 degrees fully cooked. it even topped out at 145.

yes, it calms down the metallic flavour. i lightly dredge in seasoned flour, and saute in butter. deglaze the pan for a mushroom onion gravy.
