160° is well done for venison. Well done venison = shoe leather. Venison is extremely lean, so it needs to be cooked no more than medium (pull at 130, then it'll rest up to 140-145). He also kept calling it "veal". Hope you get it done better next time.

It's safe to eat venison raw so pulling at 145 deg would be fine. Don't fear the game, eventually you'll get used to game flavour and which is really just the flavour of meat. Domestic animals have lost the flavour of meat.

Hey good job on trying something completely new to you, slightly overcooking it but still posting the whole thing as a learning experience! I’ve got a venison sirloin roast in the freezer that’s lined up for an upcoming cook and I appreciate the temp reminder. Venison does not forgive.

Way overcooked! When you overcook venison it tastes like liver and is dry and gritty, this goes for all venison whether ground or whole cut. For smoke or low&slow you should remove venison roast at 130 and never more than 140.

It's 160 for ground meat, 145 for whole cuts.

Right on...I've smoked a few deer quarters wrapped in bacon....I think I have a video on one ..but yours looks more presentable .

Great video. Roasts are going to dry out on you pretty quick. You should cook tenderloins and backstraps to no more than 135. Thanks for posting.

Love some venison. All my buddies keep asking if I'm gonna smoke some deer meat this year. I have a few roasts in the freezer. I may have to try one out. Thanks for sharing!!

Looks good but growing up hunting and eating Elk and deer it's a very lean meat and I've always treated venison like a beef steak when it comes to seasoning and wellness
