what is your opinion on the char you acheived - I just did beef rib like this using a hot hot fire with post oak, and hickory chunks fantastic flavor, all the fat burned right off lots of nice flames like in this video, great black char on the meat and I thought they were fantastic- my wife is freaking out going like this is cancer causing char are you crazy (apparently all the medical studies support this), any opinion on this at all? (for the record, I'm gonna keep charring the living F**** out of my food until my demise), but just wondering what other chefs think about this topic - especially you BBQ Southern Style thanks
Thank you. I live life in moderation and leave the rest in the Gods hands. Funny in the 80s they were telling us the char on things was great for are stomachs lol. They said burnt toast was good for us smh. Moderation is key in my book and God for us all. Hope this helps and enjoy life my friend. We only pass this way once.
