Danny I am an old retired engineer and the only thing I can say about your smokehouse is that it is definitely epic and I wish I had one just like it! Go on with it you know what you are doing! I can almost smell that cheese up here in Arkansas

I used old oven racks as my smokehouse racks/shelves. Strong, really functional have stainless steel mesh cut for them for when I have smaller items to smoke.

Provolone Cheese is amazing smoked!! I love waking up to the smell of coffee brewing, bacon frying and walking outside to smell the smoke house going, on a very cool or cold fall/ winter morning. The fragrances just seem to linger longer in the crisp air. ❤ These are some of my most favorite memories of being at my grandparents farm. Heavenly💕❤

That's interesting. I've never see how cheese is smoked. I always thought it was a flavoring added. Smoker is beautiful by the way.

I live in Pennsylvania we have had a smoke house since I was a kid. Your smoke house is a lot fancier than ours and we use a twelve foot pipe for ours. I have used my jointer for wood to shave and soak in water for more smoke. I might have to try cheese now.

Love your smokehouse!! About 20 years ago, when I started drinking raw milk from a local farmer I studied cheesemaking so I could make raw milk cheese. I have made all sorts of cheese...hard, soft, fresh...and yes, I did smoke a few rounds of Gouda type. If you'd like to try your hand at making some home made cheeses I'd be happy to share some of my recipes. I don't think there is anything better than a smoked chile pepper gouda.

Oh lol either that black cow is a slow learner or it likes the leaves being dumped on its head. No longer feeling sorry for it!! Love the up close look at the smokehouse and the firsthand look at the process of smoking cheese. Wanda I love the format of this video, it’s really pleasant and beautiful. Of course I have this opinion because it’s the same format I use, even one of the songs I use. So feeling a kinship with you. I admire you both.

I also use peach, cherry and plum wood for this process. Tried using pear wood on a few projects but didn't care for the flavor as much.

I was thinking the same thing. We have an offset smoker don't have cherry wood. We usually smoke our meats with mesquite and oak or hickory and oak because that's what is on our land.

Yumm..... But you missed the longhorn cheese. It's one of my favorite cheeses to smoke. Problem is, it doesn't last long enough to cook with.

May I make a suggestion about using fat lighter to start your smoker fire. Instead try using a chimney starter with a few pieces of charcoal that uses a sheet of butcher paper or newspaper. Your smoker will buildup creosote over time just like a chimney does when you burn pine instead of dry hardwoods. That is would burns houses with a chimney fire. You go with a #10 can that has holes punched at the bottom

Please do one on salt curing meat and smoking a ham (explain the difference cured meat coated with black pepper vs. salt and the type used, etc)..pleeaaze Danny! Would love to see it start to finish.. have you ever tried to smoke a sweet tater?.. some of that sourghum slathered on it and then smoke that tater.. asking for a friend 😁🍖🍠🧀

That brings back memories of my Grandfather's farm. Never got a chance to see it done only stories about meat in the smoke shed. Another nice construction job by Danny. About the wood, do you use apple on the different items you smoke??

Thanks for sharing! Do you have any issues with having bare concrete on the floor of the firebox? Cracking? Exploding? Also, what type of concrete did you use?

Two question here. Danny said he waited for coals because the fire caused soot, so when the coals run out o you start the wood in another container and just add the coals or just throw in another bunch of wood? Secondly,. Will smoked cheese last longer or does smoking shorten it's storage life? Boy those cows sure looked happy and spoiled today. Great video.

Hey Danny do you presoak your apple wood in water before placing it on the coals? I found I get better smoke and use less wood through the process.
