For this video, I wanted to show that sashimi can be eaten in many other ways besides just dipping it in soy sauce and wasabi. Another popular Japanese condiment is Ponzu, and it's very popular with sashimi and salads. Go ahead and experiment with how you want to dress up your ponzu sauce. I prefer lots of ginger and some onion. Ponzu is a great sauce to use for sashimi, because it’s not over powering and mask the subtle flavor of raw fish. In fact, the slight sourness and sweetness enhances the savory flavor of the fish. Give it a try!

Hey I could tell that you live in Florida. You should start a sashimi series on native florida fish like Sheepshead, Snook, Red fish and other species. Also, thanks for the helpful tips and tutorials!

Hey Chef, as always fantastic upload and tutorial!! After the white onion topping the snapper, was that thinly sliced lime zest, or green onion?? I mean I think it was green onion, but a little lime zest wouldn't hurt..... Lol.... I love learning and embellishing recipes into different things, and that's what it's all about I guess. So thanks for the inspiration!!! And please make more videos, I love to see you work with all types of fish and seafood.

This perfect! I was looking for a recipe to use my fresh snapper and somewhere add gochujang. Is that orange bell pepper on top of the onions at the end?

Oooh gochujang, that's going to be good. Just an assortment of small sweet peppers on top for some texture. Use what you like

what are u rinsing and soaking from the mandalin, i feel lost cause i dont know what it is that your chopping for that part!!

I wonder how big this fish was, I caught a 14 inch margrove today and referenced your vids to help me filet it. I had plans on doing sashimi and nigiri but i think my filets turned out a bit small. I don't even really have a bottom loin to work with

14" is a bit small but workable. Probably just stick to sashimi. If you get a bigger one, over 18"+, than it's easier to work with.
