A Boston Butt being smoked on the SNS KAMADO standard kamado style with the heat plate. Also used the BBQ GURU DIGIQ DX3 to maintain the pit temp and the meat temp. Used Uncle Steve's Shake SpicyR and Gator Shake.
We also used the Kickash Basket with the Kickash Can which makes for a great cook and cleanup.

That kamado set up sounds perfect Phil! I'm not a fan of cooking in the dark...but it happens. Hope you enjoyed the Uncle Steve's Shakes! You had a lot of flavors goin on there. That bone fell right out at the end. Another delicious video bud! Seen Toby wanting to get inside so he'd be there for any pork that hit the floor!! Y'all take care up there!!

What's up in FL big Rob. Yea, I had Uncle Steve's going on. The Pit Dog sittin up pretty watching me work. The kamado puts out some great food and so easy to cook on. Toby was watching Janet cook. He's not satisfied until we are both in the same room or same place, then he is completely happy. If he's out, he wants Janet, if he's in he wants me. I think we are under his control. Pork butt looked great Phil! Even without the BBQ Guru, once you get your draft set correctly, that Kamado will hold temp all day and night! Nice cook!

Yea I figured that. You are one who would know with all that cook time. Amazing when I go out 2 or 3 hours after shut down, still can't leave my hand on the top. The charcoal is snuffed out, but the thick ceramics hold that heat. Thanks Craig.

Phil N Florence The advantage of the Guru is you probably can get your pit to temp quicker with the fan and if you do an overnight cook, it is less stress and better sleep! LOL One day I will get one for the overnight cooks! It is amazing how long the grill stays hot! Love the Kamado!

Great cook Phil you've really got that Komado tuned in. Pork butt I think is my favorite to cook. Catfish really like it too, we were camping a couple years ago and I smoked a butt when we were done eating I took a big piece crispy fat put it on a treble hook and caught several catfish with it. Keep up the great work Phil.

That was a set n forget it smoke if I ever seen one. The Butt came out real nice and you just backed why I don't like to freeze the meat unless it is a have to thing. Great looking pulled pork, Phil

Yea it's best to buy fresh and cook within a few days out the fridge. I've had this happen a couple times. But the show must go on. lol Was still good. I"m glad on this cook, I wasn't having to feed the offset an extra 2 hours and tend fiya. Thanks for watching and the comments. Have a great week.

Hey Phil! I see You are really Loving the use of Lump these days. Not only for the taste that it gives but like you showed at the end, there is minimal ash. No doubt that Guru/Kamado Combo is the way to, especially for colder temp weather......all that ceramic heats up and then it don't take much fuel to maintain it after that. You always have the tastiest pulled pork on YT! 👍

Hey Ken. That pulled pork off of the kamado was really good. Better the next day out of the fridge. After what you saw, I put some more Uncle Albert's Red cap sauce on it too which is a combination of spicy and sweet with vinegar. It stepped it up some. That was not on the same level as shoveled in oak coals under the meat, but was definitely a proud 2nd. You can't replace that flavor from the wood coals, no way. But there are different levels of good, you know like at Sears, Good, Better, and Best. LOL I'm about ready to do a pit cook with the fire pit and shovel. I wish you could be here when I take it up. Since we've had plenty lately, I'll wait but will do it before the hot weather comes back. Other than a long cook, that was the easiest cook I've had. Didn't have to touch or be concerned about the fire. The guru kept that cooker on point 11.5 hours and coulda gone 6 more I'm sure. That's good to know when I do a big brisket. The kamado is still too hot to leave you hand on top over 3 seconds even after 2 hours after shutdown. Amazing. Thanks man and have a great week.

Hah well that frozen butt took a little longer but it turned out great Phil! The lump did really well, I've never had fogo but do like using lump sometimes. Your junk box and drawer have the same organizational mehod I use, the 'its in there somewhere' idea. Hope y'all have a great week!

LOL, yea I have one slider tray I try to keep all the small stuff and electronics. I just used that alligator clip the week before. Funny thing, I looked online and one clip plus shipping would be close to $10, but I found 100 count box at amazon for $10. Got here today. Now I can just throw them in the yard if I want. LOL They were slightly loose on the probe, but with a easy grip on the channel locks, now they fit perfect. So, if you ever need an alligator clip, I got'em. I like the Fogo lump. Burns hot and clean. Only powder left in the cooker. Have a great week Pickles.

I'm glad yu have good smoking weather. It's well below 0 here in SoDak and that's without the windchill factored in. That pork really looked nice. Shredded so easily.

WOW !! That is some cold country. Yea, we have pretty mild weather most of the winter. There are spurts of cold weather that comes in when there is one of those blast from the north. It is suppose to be 24 Tue & Wed night. I've seen some other channels in Minn. and NY showing the snow and cold temps. That would take some gettin use to. I understand now why some tubers say their grills are shut down after seeing some of the pictures. Thanks for watching John. Stay inside. LOL

I like that SNS.. Love how easy it is to clean out. You definitely have that pot figured out.. The added seasoning on top of the pulled pork looked very tasty.. Sorry I haven't had a chance to watch your vids as they come out but I see I only have 2 more to go. I've been very busy lol.

Hey Tom, yea I wore rubber gloves working up poles about 18 years in my early career before getting behind a computer and phone. That's when it began to happen. 190 lbs of muscle began to morph. LOL Glad you enjoyed the cook.

Hey Kent. Yea Toby was watching Janet cook. LOL It took longer due to the frozen middle, but it was the easiest butt I ever cooked/smoked. Didn't touch any part of the fire for 11.5 hours. Maintained 260 the entire time. You would love it. Thanks for watching.

The first time I saw those accessories, I knew I'd have to have them. Dave offers both items with his SNS KAMADO, but they come from Chad over at KICKASHBASKET.COM. He has multiple builds for different makers of kamados. The BGE and Kamado Joe are two which he carries, and some kamado's are grouped together because they are the same size. If you have a kamado, he can probably fix you up with something that fits. Thanks Louis

I haven't been able to fit the BBQ Guru adapter plate to this grill, even after grinding 3 times. Really seems like this vent is way smaller than your standard Kamado. Seems like the Guru plate is just so wide you basically have to warp it into a curve to fit it too.

interesting cook to say the least. I always wondered how to smoke a partially thawed pork butt, now I know. I am now considering an S&S Kamado grill vs the Weber pellet grill for purchase this year. I am also going to purchase a BBQ Guru. Your documentation and advise on your cooks is second to no one! Does the Kamado harm the covers of the meat probe cables? If S&S is not compensating you they should. Your videos are a real use selling ad. Oh one more question. I am passing through SC twice this week to visit my sick cousin in FL. Basically driving down 95. Is there any place you know of where I can buy some Uncle Alberts or Prosser's BBQ sauce? I will look on line today but I believe searches I did in the past were not all that helpful.

Hey Thomas. I love the SNS KAMADO. It puts out some great food and so easy to cook on and easy to clean for next use. I am an affiliate with SNS, so if you go through my link on the show more screen, it'll knock a few coins over to me, and I"d appreciate that. There is an easy place to get most all the local sauces I use from the Piggly Wiggly. If you take the David McLoud Blvd/Magnolia Mall exit, basicly I-20 exit into Florence, go thru 3 stop lights and I-20 ends at the Florence Mall where the Piggly Wiggly is right there. They carry Prossers, CHS, Richards, Uncle Alberts yellow cap and red cap. Some of these are becoming available online now where they haven't been in the past. Uncle Alberts has some outlets, and CHS I think on certain Ebay channels. Those are a mustard vinegar base sauce. Prossers is closer to an E North Carolina type tomato-pepper-vinegar sauce. I've found mixing them up some makes for good Q too.

Hey Mike. Using these type gadgets is mostly because I have the RU-vid channel. I try to offer lots of different ways to cook food, partly for info purposes, and also for entertainment. You definitely don't need any technical accessories to cook on your pits. All cookers come ready to cook on. They can be fun and interesting though. I'm glad you liked the outcome. I'm sorry to say brother, but for charcoal smoking....that is not nearly even any bark. You may as well been using a propane or pellet smoker. Maybe more sugar in the rub or try spritzing with simple syrup. Also I start the big butts fat down for 2hrs then flip. This helps the cap render and moisten the meat for the rest of the cook. And remember cold and wet takes more smoke than room temp (it's actual science). Check out amazingribs.com

Haha, I wondered if anyone would see that. When I started the difference between the smoke and guru were quite different. I wanted to double check by using the Maverick XR50. I Also had just put new batteries in the XR50 and had it in my hand. Just unplugged the probe wires and inserted same into the maverick. They both read the same against what the guru was reading. I had misplaced my alligator clip that is on the pit probe from the guru and was using a regular grate clip. Wasn't sure if that made the reading off some. The two readings did come together later in the cook, which I think is the way using the guru works against the readout on the other wireless thermometers. I've seen it before. The pit temp was reading about 12 degrees higher then the others. I used the smoke and maverick temp for reference.

I was thinking for that opening shot for more atmosphere you should have some dirty smoke coming off the smokestack and Toby on a Mic howling. Have you ever cut a pork butt in half, as in setting like you have it on grill and laterally cut in half to cut down cooktime. More surface area more bark more flavor. Your cook with your guru was impressive along with charcoal reveal and kickass basket and bucket demonstration. I happen to watch Delmara channel prior to this, He made Korean Ribs aka country ribs with some great seasonings and a grillmate rub I never seen, Now close your eyes and let your imagination go, Sprinkle special grill mates rub on aka country ribs, Smoke to your desired bark is achieved, no peeking place the ribs in braising pan of choice add pineapple juice and Korean bbq sauce braise to desired doness, couldn't find that one in dictionary so I made it up. If you want to take your blindfold off now we can indulge. Another channel I stopped by made comment about butcher paper changing flavor of wrapped item as opposed to foil, I thought breathability was main reason for one over the other. In closing I was wondering what special Dinner are you going to make for Valentine's Day, then you can pull out the mule break some ground and get 2020 going.

LOL, only you can comment with so many facets. I guess cutting the pork roast in half could and would do that. However, I was just staying with tradition on this one. The country ribs cook with Korean accents sounds delish. Smoke from the smoker. I'll try to capture that in the future. Who knows what my intro will be. No set thing, just willie nillie. I haven't thought that far ahead on Valentines Day. The ground is too wet to plow around here yet. We've had a lot of rain over the past month including today. I"m lovin that kamado.
