I'm retired after 46 yrs. with the Power Company. I liked my working career, but now have more time to do things I enjoy. I have always had BBQ Charcoal Grills and gas grills. After much research and cost consideration, I ordered my first Texas Original Pit offset smoker. A few months later, I purchased a Weber Smokey Mountain Smoker and have learned much more about grilling and smoking. I enjoy being outdoors on College Football Saturdays or Holiday Season smoking butts, ribs, brisket and grilling anything and everything. I love making mods to my equipment and having fun with it. They are made totally different now you get 3 new legs with a squared off base with a hole already drilled and all u have to do is mount the wheel to the legs and mount the legs to the smoker. No drilling. And the casters are larger on the new version
I had a wedding party of about 100 and cooked and served bbq pork, hash and rice, and all the other food that goes with bbq. Here in Augusta GA Sconyers is the place for hash and rice; however, it is very expensive for such a large party so I used your recipe to make the hash. I had rave reviews and was told my hash (your recipe) was as good if not better than Sconyers. Well that is an awesome complement since Sconyers has been around over 60 years here and you did a great job with the details. Thanks for such a great recipe.
When I make bbq I cook two butts on the smoker. Smaller gets put in the pot of hash. Just on the GA side of Savannah River we eat it here too! Great video!
Phil, thank you! I'm from Florence myself but moved away with my wife when she was doing her graduate work in college. I've missed the Pee Dee style hash so much over the years but I didn't have any reference, recipes, or family members that knew how to make it. I'll have a little piece of home soon and I look forward to it. Much love.

When I first got my WSM a few years ago I bought the lid hinge. It made the smoker top heavy and I couldn’t use it. Has the lid hinge been perfected so it doesn’t make the smoker fall backwards? Thanks
I'm sorry but wrong wrong wrong. No need for processing if hash is cooked right. Slow rolling boil is all that's needed to making Great hash. Only ingredients is meat,water,salt ,pepper,red pepper flakes,half pot of onions and alot of patience and above all else don't stop stirring
Phil, I live in Bishopville, SC which now has no BBQ restaurants (used to have Watford's) that has hash and rice. We can go to Sumter where Ward's has it. Sometimes for a change I go to Columbia and eat at Maurice's for a different taste. When I was growing up we would butcher the pig, (after euthanizing ) and cook over real wooden logs. I was told, to make the hash they also put the oink in! All I know is that it WAS "crack"! I never knew how to cook it, but now I do. I love to cook and this is going to be my next project. I will use my PowerCooker XL to cook the meat. Thank you so much for the video. (I did see one from Scotts, but I do not have all the huge pots he uses). Again, thanks for taking the time to share. Awesome bbq grill setup! I can't wait to have my bbq arsenal set up. I love being a backyard grillmaster General! My army is full of grunts that are always ready for war too. I have two neighbors that I truly detest and they both have shown their true colors as being racists! One even has a damn monkey that he hangs from a tree in his backyard. I will never stoop to their level. They are nothing but poor trash and are jealous because I am retired at an early age and living a great life with a great wife and family with home ownership. They truly hate when I grill! I can't wait for Spring and will be conducting joint military grilling exercises for my grills! I will be awaiting a nice size cabinet smoker from Lonestar to arrive for duty to join my Old Smokey unit consisting of a 55 oil drum grill and one vertical smoker. I will also have Colonel Kamado Joe Big Joe arriving too. I will also be with a nice Lang Offset too.
