Also we know that he knows Arthur will die anyways so he wins in the long run. He sees a bullet in Arthur's future because only a person with low honor would attack him. Low Honor Arthur gets shot by Micah.
This NPC is legit blind because if you point a gun at him without antagonizing he won’t react like all others. There’s another guy that claims to be blind but if you point a gun at him then he reacts and gives away his cover

Just close your eyes and have someone you trust do punch around your head and tell me you seriously don't feel them coming.
I know a few totally blind people and they can tell where you are with unnerving accuracy. Arthur wears spurs which jingle with every step, is toting a gun belt which will also make noise, he's shouting and he's rushing about in grass. It'll pretty obvious where he is. Plus Cassidy knows who Arthur is, how he feels, who he hangs with, what he gets up to and what his future holds so chasing Arthur down and knifing him is no big deal.
You ever look into the research on "blind sight"? Think of it as the biological function of the eyes and the perceptual apparatus still working, but the part in your brain that connects that to your language and... like... "image" formation systems is broken. So it's along the lines that the eyes and your body still sees things, but you don't consciously know it because that connection in the brain is broke. But seeing is still happening.
I choose to believe he is still actually blind but he can see the future so he knows you're going to hit him. It's like being able to see through the player's eyes.

Sometimes a blind man encounter spawns a fake blind man that is not actually blind. You can check if they are blind or not by pointing a gun at them, if they really are blind they will not react
Realistically that fight was probably accurate he could tell where Arthur was standing based on him shouting insults and Arthur grunted as he swung so the blind man probably just pulled back hoping to not get hit
Well since the game is before automated machines that’s entirely possible. but moonshine can only make you go blind if it isn’t distilled properly. which is pretty common if the people making it are usually hillbillies with cholera 😂

this has been the longest running joke, it became an easter egg. like, the devs put that there, so they expected you to insult the blind man. but no one ever did, but finally we hit gold. we basically, after years, finally got to hear the punchline of the joke
I like to think he's like Paul Atreides, blind but with the future wrapped so tightly around him that he knows exactly what to do. Also, that dude has $200?? Is that each time? Like if you hogtie him and loot him, then find him later will he again have that much?
Man the blind man was so kind I would give as much as I could I kinda wish he stayed in better environment like Saint Denis the law would also be a lot more stricter so no npc would mess with him
My theory is that the old man was probably a famous gang leader or gunslinger and when he went blind he decided to help people this video shows he still knows how to fight even with his blindness. In the next game we should see a backstory to this character
