I love how soft and chewy these cookies are. And with a light sugar coating, they look as good as they taste. Enjoy!
Ingredients:
• 1/2 cup butter - room temperature
• 1/2 cup granulated white sugar
• 2 tsp vanilla extract
• 1/4 cup molasses
• 1 egg
• 2 cups all-purpose flour
• 1 1/2 tsp baking soda
• 1 tsp ground cinnamon
• 1/2 tsp ground ginger
• 1/2 tsp salt
• Sugar coating:approximately 1/4 cup of granulated white sugar
Instructions:
1. In a large bowl, beat together butter, sugar, vanilla extract, molasses, and egg until smooth.
2. Sift in dry ingredients: flour, baking soda, ground cinnamon, ground ginger, salt. Stir with spoon until the texture is firm enough to continue mixing with hands.
3. Roll dough into ping-pong sized balls. Roll each ball in sugar.
4. Bake at 350°F for 5 minutes. Then flatten each cookie with a spoon. Rotate sheets and bake for another 5 minutes.
