Soft, Delicious Chicken & Egg Chinese Steam Buns
(How To Make A Chinese Steam Bao/Dumpling)

• Soft Delicious Chicken...
Ingredients
(6 medium size of steam buns/bao)
(A) Fillings:-
1. 140g Boneless chicken thigh ( 1 small size of whole chicken
thigh )
2. Some parsley & green onion
3. 1/2 tsp Salt
4. 1/4 tsp Brown sugar
5. 1 tsp Light soy sauce
6. 1 tsp Corn starch
7. 1 tsp Oyster sauce
8. 1/2 tsp Fried onion & garlic ( can be replace with grated garlic &
onion )
9. 5 tbsps Water
10. 1 tbsp Oil
11. Sprinkles of pepper
12. 1 Hard boiled egg
(A) Yeast mixture:-
1. 90ml Warm milk
2. 3g ( 1 tsp ) Instant dried yeast
3. 5g ( 1 tsp ) Caster sugar
(B) Dough:-
1. 190g ( 1 1/4 cup ) Bao flour ( can be replaced with all purpose
flour )
2. 15g ( 1 tbsp ) Caster sugar
3. 1/2 tsp Baking powder
4. 15g ( 1 tbsp ) Melted butter ( can be replaced with vegetable
cooking oil )
Steam for 13 minutes. Open lid after 2 minutes.
*Don't open lid right after turning off fire, sudden changes of temperature will result in buns collapse.

I used the dough recipe from here and doubled it. It was excellent!!!! Not difficult to make but then I did use a stand mixer. Thank you for a wonderful recipe!

I had a SAC today for my school food technology subject. I used this recipe and although it was my first time making bao buns, they turned out amazing! They were soooo delicious and I was very proud of myself and got many compliments from my classmates and teachers. I will definitely be making these again! keep up the amazing recipes!!

when i was a little my mother would bring me pao everytime she came back from work, i used to only likes pao with chocolate or chicken filling. but now I like pork pao(baozi) thankyou for the recipe, I always wanted to make it by myself since forever!

When i was a kid i wached a movie named "little Hedgehog". In that movie little black boy eats white buns , i fall hungry for that bun. After 30 years i found this clip. I will make this today. i fill my 30 year old hungry dream today. Thanks

Very crisp and useful video - followed your recipe and the Baos came out ...wow! Everyone in my home liked - even when it was my first time! Only problem I faced was when the juice oozed out over the top while sealing the baos. How do you keep it all in? Did I use more water or did I take more filling?

You put raw chicken meal for bao filling. Is it enough time for chicken meal to cooked well? Coz you steam ur bao for just 13-15 min. Thx u for sharing

Hi Aysha, bao flour is type of low protein flour but contain citrus acid, so it is more soft and suitable for the chinese steam bun, if don't have this type of flour you may substitute with all purpose flour.

It's cake flour with citric acid added, King Arthur flour sells citric acid in shaker bottles. Probably doesn't take much, just add a teaspoon to your flour.
