The lesson is not assuming that the inner radius is twice the thickness, it's setting it. This is a design specification, not an assumption.

Why do you assume that the inner radius of the bent metal is twice the thickness?

How does this "K" line (neutral axis) look like if you have sheet bend into "Z" shape?

Finding the neutral axis of a bend depends on how what the angle and radius are. So no help in actually calculating "K-Factor"
