The problem is that apparently, they were basically served by grinding up the entire lobster (shell and all) into an unappetizing paste. And they weren't exactly concerned with keeping the lobsters as fresh as possible, so they were at least a little off by the time they ate them, if not entirely spoiled. So yeah, definitely not as nice as it seems.

Another reason lobster is expensive isn't just taste, it's acquiring them. Lobster farms basically aren't a thing, and basically all lobster is caught in the wild, as opposed to chicken which is farmed, so you unfortunately can't as easily or cheaply monitor and raise them as you can other meats. In the days it was prison good, farms were not anywhere near what they are now and a lot of food came from gathering whatever they could find as food, so lobster would not have been as rare in the grand scheme of things. Stuff like importation makes a big difference. Fun fact, the reason prawn are so much more expensive in America than Australia is because prawn are too dangerous to farm in the US (they carry disease that don't affect humans, but do affect other shrimp and can devistate sea life if not careful), so most of what you pay is importation cost and limited supply. I remember when I lived in Vietnam, prawn was like a fourth the price it is in the US.
