----Explanation of the glitch----
I initially thought about trying this when thinking about one instance of using the chao key glitch. Whenever I obtained a chao key and finished the level, then left the chao garden, if I ever used the chao key glitch afterward I would end up at the chao garden instead of the test level. I later thought that maybe this was because you were warped directly from the stage you completed to the chao garden, and therefore the value of the chao garden was stored for your chao key glitch teleport location. I then thought about 2 player mode and how in a best 2 out of 3 match you were sent from one stage directly to another. Keeping this in mind, I thought it would be possible to go to 2 player stages in 1 player. However, what I found was even more surprising. The last stage you go to in a 2 out of 3 battle, for the most part, saves the location of the last level you played on in that set provided that you finish every level (i.e. don't exit out of the level). Therefore, it doesn't save the location of "2 player City Escape" for example, it just saves "City Escape." It's because of this that when you perform the chao key glitch immediately after doing a best 2 out of 3 on select stages, you will be sent to that stage as whatever character you performed the chao key glitch with.
----What is the "chao key glitch" and where can it be done?----
The chao key glitch is nothing more than finishing a level while having a chao key collected that doesn't make it to its final destination (i.e. a 2D chao face) before the level ends. There are 2 ways to perform the chao key glitch. One method is to collect the key in such a fashion that it stays as its 3D model where it's supposed to turn into a 2D model (see Tails video below for an example). The other method is to collect the chao key as the screen is fading away from the completion of a level, which requires you to touch a goal ring while the screen is fading from an intentional death (see Sonic video below for an example). Listed below are links to videos where the chao key glitch is performed, as well as the character that it is performed with.
Note: As a reminder, make sure you are playing the game with an aspect ratio of 16:9 (which is an option available ONLY for PS3 and Xbox 360) if you are attempting a chao key glitch where the key stays as a 3D model (the method for Tails being an example). For the PS3 this can be set via your display settings (and probably something similar for Xbox 360). If you are playing the game in 720p, then your aspect ratio is automatically 16:9.

----What are the select stages that I can go to?----
I am currently looking into to this a lot, and will try to keep this section as up-to-date as possible. I will list all of the stages that you can go to here, as well as include any information that would be beneficial for the player to know before attempting to go to a level and facing disappointment.
Downtown Race - Playable as all characters (however the game messes up as Knuckles and Rouge once you try to move, no way around it as far as I know)
Grind Race - The game freezes for all characters
City Escape - Playable as all characters (however the game messes up as Knuckles and Rouge once you try to move, no way around it as far as I know)
Metal Harbor - Objects and music do not load up, you can explore the stage as Knuckles and Rouge however
White Jungle - Playable as all characters (using the vines as a Knuckles, Eggman, or Tails can crash the game)
Green Forest -
Sky Rail - Playable as all characters
Radical Highway -
Final Rush - Playable as all characters
Final Chase - Playable as all characters
Pool Quest -

----Miscellaneous----
As you can see, there is a lot of information that needs to plugged in and a lot of things to cover, as well as much more experimentation to be done. Your patience is appreciated as I look into this matter in more detail. Enjoy! ^_^
