Sourdough Breaded Chicken Strips/french fries and sauce

Sourdough Chicken Strips
INGREDIENTS:
1 cup sourdough starter or discard
1 egg
1 cup all-purpose flour
1/4 cup bread crumbs
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 large chicken breasts cut into strips
oil for frying. I used a deep fryer
INSTRUCTIONS:
In a bowl, mix together sourdough starter and egg and set aside. In another bowl mix flour, bread crumbs and spices and set aside.
Warm up your oil. and start dipping your the strips.
Take on piece of chicken and dip it into the sourdough mixture coating it completely. Than dip in the flour mixture. I put 2 stips in each fryer basket cooked unril 165°. Continue until done.
FRENCH FRIES:
Cut potatoes into fries. Cook until golden brown.
Mayo and ketchup mixture.

How do you make sourdough starter?

What I did was used all-purpose flour 3/8 cup and 1/4 cup distilled water. and feed it once in the am and once in the pm. I started it on a Saturday because I wanted my bake day to be on Saturdays. While doing this process I leave it on the counterI kept adding to the bowl until that first Saturday than I took out and put 1/2 cup into another bowl. I used the left over starter for pancakes and waffles. Did this process until I decided to try and see if it was mature. To test it. I put 1/2 cup of starter in two wide mouth pint jars. I put one in the fridge and left the other on the counter. If the one in the fridge doubles the counter starter. You have a mature starter.
