What I did was used all-purpose flour 3/8 cup and 1/4 cup distilled water. and feed it once in the am and once in the pm. I started it on a Saturday because I wanted my bake day to be on Saturdays. While doing this process I leave it on the counterI kept adding to the bowl until that first Saturday than I took out and put 1/2 cup into another bowl. I used the left over starter for pancakes and waffles. Did this process until I decided to try and see if it was mature. To test it. I put 1/2 cup of starter in two wide mouth pint jars. I put one in the fridge and left the other on the counter. If the one in the fridge doubles the counter starter. You have a mature starter.
