Sourdough Brioche Recipe
Would you like to make the rich French bread (Brioche) under home conditions?
Do it by paying attention to all the tricks. I don't want your material to be wasted. If there is something you do not understand, please write in the comments.
Sweet Stiff Starter;
60 g sourdough
60 gr flour
20 g water
10 g sugar
It gets ready in 8-10 hours (23-24 C)
Dough;
Sweet Stiff Starter
230 g flour
30 g sugar
90 g eggs (reserve less than 3 egg yolks for brushing))100 g milk
8 g salt
70 g butter
Dough is made with all ingredients except butter (see gluten window) and butter is gradually added to the dough.
Make the dough, which has been rested for two hours, into three meringues and roll it out with a rolling pin.
The mold I used; (20x11x11 cm).
When the dough comes to the upper level of the mold, spread a mixture of egg yolk and a little milk on it and bake (in a preheated oven at 180 degrees, 30-35 minutes on the upside down setting).
