Homemade granola bars:
4 cups whole rolled oats
2 cups creamy natural peanut butter
4 tablespoons hemp seeds
1 cup honey
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1 cup mini chocolate chips*
1 cup pepitas or almonds or any nut
Instructions:
Line an 9x12 baking pan with parchment paper.
In a large bowl, stir together the peanut butter, honey, vanilla, and salt, until smooth.
Add the oats, chocolate chips and the pepitas (or nuts). Stir to combine and press firmly into the pan.
Use a second piece of parchment paper & flatten the mixture.
Chill for at least 1 hour, then slice into bars.
Store bars in the fridge.
Notes:
If using large chocolate chips, chop them up otherwise it won’t be easy to slice into bars or you can
melt them and layer at the bottom, then add mixture overtop.
