Who LOVES Southwest Egg Rolls? This easy recipe tastes GREAT!
Southwest Eggrolls
1lb cooked, deboned, diced chicken
1 diced onion
1 diced green bell pepper
1 cup frozen sweet corn
1 15 oz can black beans, drained
8 oz shredded Monterey Jack cheese
1 packet Taco seasoning
16 egg roll wrappers
1 egg, beaten with a splash of water
Oil for frying
Toppings and/or Mexican crema
Fill Egg Roll wrappers with 1/4 cup of filling
Preheat oil to 350
Cook until egg roll is golden brown
Remove and drain
Top and Enjoy
