Spanakopita | spinach pie | tzatziki sauce | greek food | mediterranean food | party food | party
Spanakopita:
Ingredients:
Firm tofu - 300 gms
Spinach frozen - 300 gms
Almond flour / ground almond - ½ cup
Green onion - ¼ cup
Nutritional yeast - ¼ cup
Garlic (grated) - 3
Olive oil - 3 tbsp
Salt - to taste
Oregano - 1 tsp
Black Pepper - ½ tsp
Lemon juice - 4 tbsp
Melted Butter - ½ cup
Phyllo / Filo pastry sheets - 12 to 13
Method:
1. Keep 2 cups of water to boil adding salt to taste.
2. Add 300 gms of spinach (roughly chopped) to this.
3. Let this boil for about 30 seconds.
4. Filter the spinach using a strainer.
5. Press down to filter out excess water. DO NOT throw away the water (can be used in soups or any other dishes).
6. Wrap the tofu in a tissue and press it with another tissue to remove any excess water.
7. Crumble tofu into small pieces.
8. Add 300 gms of spinach to the crumbled tofu.
9. Now add ½ cup of almond flour / ground almond along with ¼ cup of green onion and ¼ cup of nutritional yeast.
10. Add 3 grated garlic along with 3 tbsp of olive oil and salt to taste.
11. To this now add 1 tsp of oregano and ½ tsp of black pepper along with 4 tbsp of lemon juice.
12. Mix everything well.
13. Place one phyllo/ filo pastry sheet.
14. Brush melted butter onto one half of the phyllo.
15. Fold the phyllo over the melted butter.
16. Place 2 tbsp of filling onto one corner of the phyllo sheet.
17. Fold the corner to form a triangle.
18. Keep folding over once the filling is secure.
19. After folding into triangle, repeat the same for the rest of the sheets.
20. Place all the triangles one by one on a sheet of parchment paper for baking.
21. Apply melted butter on top of each piece.
22. Bake at 180 °C for about 15 to 20 min.
23. Spanakopita is ready.
Tzatziki sauce:
Ingredients:
Dill (chopped)- 15 gms
Greek yogurt - 200 gms
Cucumber (grated) - 1
Salt
Olive oil- 1 tsp
Garlic (grated) - 2 cloves
Lemon juice - 1 tsp
Method:
1. Grate cucumber and use a strainer to separate cucumber from juice.
2. Press down to squeeze as much juice as possible.
3. DO NOT throw away the cucumber juice (you can drink the juice).
4. Add all the ingredients one by one to a mixing bowl.
5. Mix everything well.
6. Tzatziki sauce is ready.
Enjoy spanakopita with the tzatziki sauce :)
