I can't believe this is a new thing I been doing this on my Webber kettle over 25 years. I do it directly over hot coals. Comes out perfect everytime.

Great procedure! Only thing I do differently, is I pull chicken from smoker at 160 internal and then throw it my oven on Broil 500 for 5-10 mins skin side up obviously. That gives you a beautiful crispy skin. Well worth the 5-10 minutes.

does the skin get crispy when cooked at 250?

Turn up the heat to 350 for the last 20 degrees or so and you will get bite through skin. It’s about impossible to get crispy on a smoker.

I do not brine smoked birds but I have had great success with using brine with oven cooked chicken and turkey.

Only about 10 minutes. I tend to rest red meat and pork a bit longer than poultry.

Florida, definitely not Texas or New York. Duck fat has been a staple binder for ever and a day. Apparently not in Texas… it’s like olive oil… but better.

If the number is high it's F if it's around 100 - 150 it's C. 265 C is way too high to cook most foods.
