Spatchcock Greek Chicken 

Greek chicken with a marinade on the grill.
Dressing:
Juice of 2 Lemons
Zest of one of the lemons minced fine
3 cloves of garlic minced
1-2 T minced fresh oregano
1/2 cup olive oil
1/2 cup canola oil
Salt and pepper (heavy because this is the salt in the dish)
Whisk to combine. Use half as marinade and reserve half for when the chicken comes off the grill.
