Special Chinese Fried Rice is fast and easy to make. It's a tasty and delicious dish because you can add your favorite toppings, such as shrimp, scallops, Chinese sausage and bbq pork.

Recipe is below:
SPECIAL CHINESE FRIED RICE
A great way to cook day old rice. Put the rice in the fridge to dry the rice and to make to make the rice more chewy.
Special Chinese Fried Rice
4 to 5 cups cooked rice
1 egg
2 tablespoons sliced onions
1 tablespoon chopped ginger
1 tablespoon chopped garlic
2 tablespoons dice bbq pork
2 tablespoons sliced Chinese sausage
2 tablespoons shrimp
2 tablespoons scallops
1/2 teaspoon sesame oil
1/2 teaspoon dark soy sauce
1/2 teaspoon light soy sauce
1/2 teaspoon salt
2 tablespoons chopped green onions
3 tablespoons cooking oil
Preheat a wok or frying pan at medium heat. Add 1 tablespoon cooking oil. Crack the egg into a bowl and beat with a fork. Pour egg onto pan and cook for 30 seconds. Flip egg and cook for 30 seconds on other side. Remove egg from pan.
Put another tablespoon of oil into pan. Add onions, ginger and garlic and stir fry for 15 seconds. Add bbq pork, Chinese sausage, shrimp and scallops into pan. Add other toppings if you like. Stir fry fry for 15 seconds. Add rice and continue to stir fry for 2 to 3 minutes. Add 1/4 cup of water if you want softer rice. Add sesame oil, dark soy sauce, light soy sauce and stir fry for 1 minute. Cut egg into small pieces and put in pan. Add green onions. Stir fry for 30 seconds. Serve Special Fried Rice on a plate or in a dish. Enjoy!

Chinese Cooking Channel I just found this chinese cooking channel because I was watching a different chinese cooking channel that I thought was this chinese cooking channel but now that I have found this official chinese cooking channel I won't be watching any other chinese cooking channels because these recipes look delicious!! No need to beat the egg and fry separately - as you finish the rice & veggies / shellfish, just make a hole at the centre of the pan, crank up the heat, crack the egg in, add a tiny bit of soy sauce and stir quickly in a circular fashion as the egg cools, blending the rice with the egg. I learned that off a street chef in Guangdong who had his whole restaurant built onto the back of a bicycle. Delicious.

Pro tip: Try using large clumps of rice, and break the rice apart as you stir-fry, instead of pre-broken rice. If you use pre-broken rice, you end up with a "wetter" texture that can be mushy.

Nice video, I liked it. So many people are confused on cooking fried rice. Good technique for home cooking. Remember peeps, cold oil in a hot wok helps make it non-stick. High temps are your friend.

I think I got the idea because one time, I watched a lady do a cooking demonstration to make spaghetti sauce. I would call this 2 table spoon fried rice.lol. Its dam good I tried it, thanks for sharing. I substituted the oil and used bacon grease yum. Try it let me know what you think. Thanks again..

Yes, bacon is fantastic for fried rice. Sometimes I use what they call "Chinese Bacon". It's the same pork belly used in western bacon. So I get that day old rice will be drier. But can you somehow use just cooked rice?

Yes, you can use just cooked rice for the fried rice. Just let the rice cool off a little while before stir frying. On the other hand, I have made fried rice that came right out of the instant cooker while still hot. So it might just be a personal p;reference how you like your fried rice. If you have some chicken, you can make some orange sweet and sour fried rice. The relish can work like vinegar and add equal amount of sugar to balance the sweet and sour. I love China fried rice it is one of my favorite type of rice and I love serving it with Chow Mein topped with chili sauce. I need to get a wok to make the perfect fried rice. I still have soy sauce and should start using it next time my family serves white rice. I should also look up a good ramen recipe.

The biggest disadvantage of cooking with coconut oil has to do with consuming it. In fact, in 2018, a Harvard professor called it "pure poison." That's because coconut oil is basically just straight saturated fat. For decades, saturated fat has been linked to raising bad cholesterol (LDLs) which can ultimately lead to clogged arteries and cardiovascular disease.

Does the grain of rice make a difference? I use short grained rice for cooking. Would that be okay for fried rice?

Short grain is better for rice puddings as it forms gels more easily/becomes sticky (higher amylopectin compared to amylose starch). Long grain holds its shape better and doesn't become sticky to the same extent (higher amylose to amylopectin ratio).

Is it true that seasoning in a carbon steel wok doesn't last as long as the seasoning on a cast iron wok? That you have to do it more often?

+Chubby Luna I can't be sure but I think you are right. I haven't owned a cast iron wok before, but when I was young I cooked with a cast iron frying pan. Chinese Cooking Channel Mine is a cast iron wok which seems to hold its seasoned surface quite well. Although, I was looking for a carbon steel wok at first, I couldn't find one in my country. Hence, I have no experience in how it holds its seasoning. By the way, nice instructions on chinese cooking. I just love chinese food over other international cuisines. Keep it up!

What's the best wok? I cooked Beef Broccorri the other night in my cast iron pan and it was good. Would carbon steel be better so you can toss it easier?

The traditional cast iron pan has a rough surface and heavier. The newer cast iron wok has a smoother finish and is thinner, so it is lighter in weight, if you want to toss it. Since I use a spatula and ladle, I don't toss the wok. From my biased point of view, tossing the wok is not really an advantage to better tasting food. Good instructional video on how to make not greasy fried rice. If I can make a suggestion, you forgot to add 1 TBSP of sugar to the meat/seafood/veggie mix while stir frying before adding rice. Sugar is the secret ingredient to fried rice as it caramelizes on the meat and veggies and adds flavor.

Sometimes there is not enough oil in the wok. Preheat the wok before adding oil. Also rice will stick if it's soggy. I cook my rice 1 to 1 ratio of rice to water. Check out my video on cooking perfect rice. Using overnight rice will also help dry the rice. Put the rice in the fridge overnight. Sometimes the quality of the wok will affect stickiness. My wok sticks sometimes but my carbon steel fry pan hardly ever sticks. I hope you will get better results. Thanks for viewing my video.

I like a little more dark soy sauce because it has so much flavor and it compliments all the other ingredients without being salty like regular soy sauce. Great video!!

Yes, you are correct. Dark soy sauce is sweeter and has less salt. When I was growing up, dark soy sauce was more popular in Chinese restaurants but less so now. But the important thing is eat it the way you like. Thanks for viewing my video on Special Chinese Fried Rice.

To get the restaurant flavor, you need a carbon steel wok and cooking on high heat. Some of my later videos, I show how to cook on high heat. If you check in the description below, click on the link to"Chinese Cooking Accesory Guide, you will find some woks that I recommend, including the wok that I use. Even if you don't buy a carbon steel wok, and use a regular frying pan, turn the heat on high when you cook. When you cook egg fried rice, you can add an extra egg. Cook it the way I do in the video. Cook the egg about half way and put back in after you finish cooking the rice. When you take off the eggs, add more cooking oil into the pan. I like using peanut oil nowadays. Add sliced or diced onions and stir fry for a minute or more before adding the rice in. Of course, use day old rice. If you plan to do Chinese cooking white often, I would suggest buying some of the basic sauces and ingredients. I would include light soy sauce which can be a substitute for salt but with a little more complex flavor. I would buy some dark soy sauce, which is sweeter and is used for darkening food, such as fried rice and dishes like soy sauce chicken. If you like spicy in your food, buy some chili sauce or chili flakes. I like Chinese oyster sauce but a lot of people don't use it. Sesame oil adds a nutty flavor, especially when you add a few drops to clear broth but it's also optional. I try to introduce different sauces and ingredients for different dishes but you can still make most of these dishes if you are missing ingredients. Just make sure the rice isn’t hot or warm when you use it, otherwise the rice will over cook and turn into mush. You get better results using cooked cold rice.

Hi, first time wok user here. Should I treat the control of fire just like a skillet? I thought wok is meant to be always very hot so I tossed in the rice and ended up have stuck rice on the bottom of my wok. It quickly absorbed every moisture and oil. If the control of fire is pretty much the same as the skillet, then I am wondering what is the purpose of the wok now…

I'm assuming you have a carbon steel wok. A new wok will stick because it takes awhile to develop a hard, patina surface. Sometimes it takes up to a year to develop a non stick surface and during that time you may need to recondition the wok a few times. Check out some of my other video on reconditioning and seasoning a wok. For the first little while, I cooked at a lower heat for my wok. Even then, it will still stick a lot of the time. I think I might have bought the wrong wok 😵. I got a round bottom wok, I tried making this recipe and the egg got stuck to the wok . It came out pretty good though. Do you recommend a wok ring??

Yes, a wok ring would help because you don't want to hold the wok all the time. I have used a wok ring with a round bottom wok on an electric stove. The heat is not quite as intense because the wok is sitting higher and not in direct contact with the heat source but it still works o.k. It's best to use overnight boiled rice. A non stick wok is great for cooking fried rice. The advantage of a carbon steel wok is that you get a bit of the smoky flavour from the wok. Thanks for viewing my video on Special Chinese Fried Rice.

This is one of my earlier videos. I like to turn my heat on high right from start to finish. The maximum wok hei is achieved by cooking at high heat. As a beginner, it's better to start at a lower heat setting and turn the heat on high as you go. Cooking at lower heat is also o.k. and some prefer cooking this way. I think this is called the refined coconut oil. It has a fairly high smoking point so it doesn't burn as easily as other vegetable oil. Also coconut oil supposedly has some health benefits. Thanks for viewing my video on Special Chinese Fried Rice.

You can use whatever you like in your own Special Fried Rice. If you want, you can put the chicken in some cooking oil with soy sauce and salt and leave in the fridge for a few hours. I like "Yeo's Sesame Oil". When you buy sesame oil, make sure it says 100% sesame oil. Don't buy sesame oil that is mixed with soybean oil or any kind of vegetable oil because you won't get the full flavour of the sesame oil. Thanks for viewing my video on Special Chinese Fried Rice.

Yes, good idea to put the rice in the fridge before cooking. I forgot to mention that. Usually, we put the rice that is left over everyday. Hello...I see you are cooking in a traditional wok...what is your opinion on the smaller non-stick woks that are out there? Like the ones from T-Fal?

I think the non stick woks are o.k. if you don't turn the heat up too high. Before I used to stir fry in a non stick pan on high heat, and I go through quite a few of those pans very shortly. The advantage of a good carbon steel wok is that it should last a lifetime. Also the added flavour of the carbon sear from the wok. I also have a small 10 inch carbon steel wok, which is easier to use. All in all, a nonstick wok like the the T-Fal still works pretty good if you don't want that searing "wok hei" effect. It takes awhile to get a really good non stick surface. Also I put more oil than usual just to help it from being sticky. If you check some of video on maintaining a used wok, it will show some ways to help get the wok to being non-stick. Let me know how it goes and feel feel to ask me anymore questions.

Hey, it went really well. The one problem I discovered is the wok kinda chokes the coal out, so I fixed this by adding some shims around the edge of the bbq so the coal exhaust can escape. Other than that, it was able to achieve really high temperatures and the results came out tremendous!

I am using the "Dexam" brand: 14 inch (30cm) carbon steel wok. You can check it out by checking the link for the "Chinese Cooking Accessory Guide" in the descriiption section under this video. There is also a wok sold through Amazon called the "Joyce Chen" brand of wok, also 14 inch (30cm) size. The "Joyce Chen" wok is similar or same as my "Dexam" wok.
