In Taiwan the food business is fierce and most restaurants will be lucky if they last 2~3 years at best. This is why many vendors operate at the local night market. Rental space is cheap and there is always huge traffic of people every evening. Only drawback is in order to survive the night markets in Taiwan one has to have really extraordinary cooking skills. Taste is absolutely everything to Asian people.... I've been to the night markets in Kaohsiung, and Tainan the food is insanely good! Every rural region has its own specialty food famous for that specific region.
