Pinakbet is an indigenous Filipino dish from the northern regions of the Philippines. Pinakbet is made from mixed vegetables steamed in fish or shrimp sauce. The word is the contracted form of the Ilokano word pinakebbet, meaning "shrunk" or "shriveled."
Ingredients:
500g Pork Belly
270g Shrimps, cleaned and deveined
3 Tomatoes
1 large Red Onion, peeled and sliced
6 cloves Garlic, peeled and mince
1 thumbsize Ginger, peeled and sliced
160g String Beans, ends trimmed and cut into 3-inches length
8 pcs Lady Fingers, ends trimmed
2 tbsp Alamang (salted shrimp fry)
30g Dried Shrimp ( Hibe )
100g Camote Tops
100g Water Spinach
200g Native Bitter Gourd, seeded, halved and cut into 1-inch thick
300g Baby Eggplant, ends trimmed, halved
1 small Squash, peeled and cut into pieces
1/2 cup Water
2 pcs Green Chilli
