Finally, a turkish coffee video that doesn't involve someone opening pre-ground coffee from a random tupperware in their kitchen. This is the only good explanation I've ever seen of what is actually going on, and how to do this right. It's so easy to do at home and it tastes amazing, and like Turgay says would be a perfect addition to a coffee shop menu since it's easy to make and doesn't require a lot of gear.
Finally we have proper explanation on how Turkish coffee should be and why. This video answered all the question i had. I have watched so many videos and people are so into foam at the top. Thanks again
I met Turgay at coffee expo in Seattle. I tried his coffee just before closing. That was the icing on the caffeinated cake from a day sampling coffee... I did not sleep at all that night :-). Wonderful coffee and his pots are exquisite.

I'm a chef and I've been studying coffee making techniques and especially Turkish coffee about 10 years. I thought I was doing it right and knew a lot about it but I am so happy for you to share this! I would total nerd and I love learning about it with an emphasis on the details. It's fascinating.
This video is a revelation. I have been trying for years to solve the secrets of making 'turkish' coffee, and I was convinced most people were wrong with old wives tales to boil the heck out of it repeatedly. Everything I had figured out through testing, he explains why, and then more! Ordering some of his products now, particularly his custom ibrik; it is extremely hard to find a properly designed one. It is also hard to find a properly shaped serving cup and he has those as well. So thankful for him sharing his knowledge, this info is almost impossible to find. FYI if trying to replicate that burner on your own gas range, note that it has a max output of 2500 BTU/hr, and look up what your range does. Typically the dial will range from 500 - 18,000 btu/hr for natural gas, so you don't want to put this on a gas range on HIGH.
Turkish coffee is the simplest way to make the best taste of coffee…..and I agree Sulawesi’s coffee especially Toraja has amazing taste! Thanks for this great video!
I wish there were more videos like this going in depth for most brewing methods, still this video alone has lots of principals that can be applied to other methods.

This is, like, hardcore coffee porn. :) Very informative--I didn't know that sugar was added originally because the quality of the coffee had gone down for economic reasons (ie, got more bitter). Sugar and other spices. I also like how Turgay is extremely knowledgable but hardly territorial about it, either culturally or nationally--or even at the level of How It's Done. He's very ecumenical--and frankly just rational: of course there are many riffs on the main theme of how to make this stuff. That's what culture is. :)
Its slightly similar how in Japan they used for many years nel drip filters, not cause it makes better cup out of already good coffee, but cause it can make decent cup out of rather bad one (overroasted, old and so on). Same story with overpowering coffee with sugar and spice, resulting in all things nice. And look today, filters everywhere. :D
Small correction, there are ibrik/cezve electrical grinders. If you want EK43 with custom burrs, thats it. And few others have that option too. I would almost bet it overheats coffee, but who knows, I dont.
if you have a all purpose grinder i would suggest grinding in multiple steps. gradually going towards the finest possible setting. this will preserve loads of energy you will have to put in. instead of grinding 1 hour for 10 grams you would only grind 10 minutes for 10 grams

Link to some recommended heat sources? Been trying with my lame glass top stove that pulses the heat unless it is cranked to high temp. I find the heat is either too low or too high. So I’m looking to buy a dedicated heater meant for Turkish coffee like used in the video.
do it AFTER so that you don't boil off the alcohol - I guess it would be something sturdy like brandy or scotch to have presence of taste vs the coffee
I bought this cevze. The silver plated one. Now after using it for 2 weeks it startet to show kind of mold looking things inside the cevze. On the silver plated side. Does anybody got the same experience or know how to fix that? Could it be "toxic" somehow?
My grinder can't even do espresso. I brew Turkish coffee from time to time, but I have to use the pre-ground blend sold a Turkish shop. Is there any way I could get my beans ground fine enough without buying specialised gear?
1st time I made turkishcoffee was this morning, I used a burr grinder set to fine then into a stone mortar & pestel. 7g is easy, just apply pressure in a circular motion. Will be trying lots of different beans with turkishcoffee as i actually quite liked it
I tried to make turkish coffee using a virtuoso set to 0 for the grind, grind seemed fine enough. The "foam" on the top was gritty and nasty! Don't know what I did wrong.
An hour long turkish coffee video. Holy crap. Well i cant seem to get it right so i might as well get comfy and watch. I cant see to get the foam right!!!!
