this weeks video is a little different as i wanted to take you through my usual 'lazy sunday' routine - on the days i want to make the most of the day of rest haha.
so I had a slow morning, pastries and coffee in bed, then i made my favourite lemon drizzle loaf, prepared the sunday roast (one of my all time favourite meals) - and i also show you a mini book haul of the books i got lately (thrifted, gifted and preordered ) --then to wind down, i take a bath and do a little bit of selfceare ☺️
it's important to take time for ourselves and have those rest days (when i was creating my thumbnail, the image of me lying in bed reminded me of the book My Year of Rest and Relaxation by Ottessa Moshfegh lol)

Lemon Drizzle Loaf
Ingredients
150g butter (softened/room temp)
175g caster sugar
2 eggs
finely grated rind of 1 lemon
175g self raising flour
125ml milk
icing sugar for dustinig
Syrup
140g icing sugar
50ml lemon juice
Method
Preheat oven 180C/350F/Gas Mark 4.
Grease and line a cake tin.
Place butter and sugar in large bowl and beat together until light and fluffy - add egg and mix until combined.
Stir in the lemon rind, then sift in the flour and fold.
Stir in the milk - then pour bater into cake tin.
Bake in preheated oven for 45-50 min, or until golden brown and firm to touch. Leave in tin and on wire rack.
To make the syrup, place the icing sugar and lemon juice in a small saucepan and heat gently, stirring until sugar is dissolved. Do not boil.
Prick warm cake all over with fork, then pour over syrup and allow to absorb into cake.
Leave to cool completely in tin, then dust with icing sugar.
