Oh I’m crying!! My last name is McCleney( I just picked Robin Banks as a cheeky pun) and my husband and I went to Ireland in May, 1993. My kids’ favorite foods are homemade sourdough pizza and homemade bread and I’m hoping that someday we can all return to Ireland and also Scotland, husband, kids, grandkids all, lol. And to actually maybe even get a glimpse of Patrick Ryan, well, I can’t even!! He’s my baking guru and inspiration?☺😍

Transition period from Autumn to winter, withnessing preparation of hand crafted pumpkin and cheese bread gave me feeling of warmth. Love your dedication and patience for creating such a beautiful bread. I will try once. I feel I should be able to play with high hydrated dough, I am pretty confident I can manage.

Oh my goodness. I just discovered this wonder of a man! My sourdough starter is 4 days old. He’s bubbly and smelling sour and beautiful. I named him Harry. (Putting up room and board, figured he should have a name). I can’t wait to make my first loaf of sourdough bread. I love watching Patrick bake. I could actually listen to the man read the dictionary, bit I digress. This is all very exciting. Signed, a San Francisco girl in Vermont.

excuse me this may be too outdated, but can you share information how big is that pyrex dish that you always use, i was going to buy one because its cheaper than the dutch oven, so how many liter/oz is this one in the video, please? And also big thanks for teaching us how to bake this precious loaf sir

it takes 10 hours for your starter to reach its peak when fed 1:1:1 ? Very cold water?

Would love to give Ireland Queensland blue pumpkin seeds. Unfortunately now it has a virus so have to buy certified virus free plants. Get blue green pumpkins, hard, deep orange flesh and dry and sweeten as stored over winter. Good fo babies mashed with egg yolk.

Can I use yeast instead of sourdough starter? If so, how much yeast should I use?

7 grams or a packet of instant yeast is good for one loaf, you might need to add more flour/water to make up for the 150g flour/water that was in the starter. It will rise much faster though

It will just be a regular one, over here in Ireland/UK people don't really make pumpkin pie so there is no demand for sweet pumpkins

Good thing about the video - the recipe and all the explanations and working with the dough. Not so good - there were no close ups of when we was working inside the bowl and he didn't actually show those things he described about cutting the pumpkin and roasting the garlic.
