Chicken Jalfrezi Recipe
Ingredients:
1/2 cup oil or ghee
2 onions, finely chopped
4 bulbs of garlic, finely chopped
Small chunk of ginger, finely chopped
2-4 green chillies, whole (adjust to taste)
2 tomato puree/concentrate
1 tsp salt, or to taste
1 tsp paprika
1 tsp crushed black pepper
1 tsp coriander powder
1/2 tsp cumin seeds
1/4 tsp turmeric powder
500g boneless chicken, diced
3 capsicums, diced
2 tbsp white vinegar (optional)
Fresh coriander, finely chopped, for garnish
Instructions:
Prepare Base:
Heat oil or ghee in a large pan over medium-high heat.
Fry onions until golden brown (10-15 minutes), stirring regularly.
Infuse Aromatics:
Add garlic, ginger, and green chillies to the pan. Fry for a few minutes until fragrant.
Create Jammy Mixture:
Stir in tomato puree/concentrate. Cook until mixture thickens and oil separates.
Introduce Chicken:
Add diced chicken and spices (salt, paprika, black pepper, coriander powder, cumin seeds, turmeric). Fry for 5 minutes until chicken starts to brown.
Simmer Chicken:
Pour in water, cover, and simmer for 20 minutes until chicken is cooked through.
Add Capsicums and Vinegar:
Add diced capsicums to the pan. Stir well. Optionally, add white vinegar. Simmer for another 5-10 minutes.
Final Touch:
Sprinkle chopped coriander over the dish just before serving.
Serve Hot:
Enjoy the Chicken Jalfrezi hot with rice or naan bread!
