For Eggplant and Tomato Stew
2 Eggplant / Aubergines
4 vine tomatoes skinned and deseeded
5 cloves garlic
1 heaped tsp cumin seeds
1 tsp coriander
1 tsp chilli powder
1/2 chilli flakes
1 tbps Lemon juice
1 heaped tbps Tomato Paste
300ml boiling water
handful chopped coriander
3 tbps oil
salt to taste

Would this be OK with rice or cos cos or noodles as you say? I should use noodles more though. What sort Would you recommend? Thanks again

I think it would be great with Cuscus it would work with rice too. Would also make a good dip. I just used egg noodles it was so tasty, but any kind of noodles or pasta would work. It very versatile lots of options with this one. Hope you enjoy it Rick 😊

Hi Jay, looking forward to doing this tomorrow 👌🏻thank you for including your lovely vegan recipe options. Weekend I made the lovely leek and potato pie with (vegan cheese)it was absolutely delicious💕yesterday was a hit with sweet potato chickpea curry especially having already cooked some chickpeas the night before absolutely perfect timing. Today I chose the recipe for lentil stew and dumplings again gorgeous and glorious result. Tomorrow I’m going for the lovely spicy lentil bake. Has to be said I’m getting more and more adventurous with using so many different spices all thanks to you 😘

Two questions; why do you take the seeds out of the tomatoes and also what kind of pot is that? I've seen it before but I don't know what it is and I would like one! This looks delicious! I'm not an eggplant fan but I'm definitely going to try it. One of your other recipes has become my absolute favorite and I never ever get sick of it... I don't want to name it because I've done a bit of variation but it was a curried chickpea sweet potato I think... delicious!❤🇨🇦

Hi Denise the pot I’m using is called a dutch pot you’ll find this in many West Indian households 😂😂 no need to deseed the tomatoes I just prefer mine deseeded for this recipe. Glad you enjoyed the other recipe. 💕😊
