Spicy green chilli Baaluka making with my Amma | ಮಜ್ಜಿಗೆ ಮೆಣಸು | Majjige menasu | Sendige

Curd chillies or buttermilk chillies are made by using fresh green chillies. It requires minimum 8 days of sundrying. Green chillies are prick by a knife and soaked in a buttermilk mixture. The mixture is with sour buttermilk, salt and methi powder. Overnight soaked green chillies are sun-dried for the whole day and again stored in the same container in the remaining buttermilk mixture. Again sun-dried for the second day. Follow the same process until the green chillies absorb the buttermilk mixture completely. Then sun-dried for again 4-5 days until the green chillies turn into crisp. This is the curd/buttermilk chilly. These are fried in the oil whenever required and combined with hot rice porridge or curd rice. It can be stored upto one year, if stored airtightly.

In TN it is called mozhaga vathal. Its quite tasty with curd rice and rice kanji. Many of the hotels in TN serve this along with curd rice even now.

Add jeera and hing also while doing powder of methi seeds and then mix it with thick tamarin pulp and sour butter milk and salt water . Soak chill in this liquid for 2 days then start drying it . Taste is super

Sour buttermilk does the job 🙂 there's no need for tamarind. The spices that we use for flavour is entirely up to us. I have even tasted these, flavoured with ajwain, omum that is. I found it strange. Evidently there are those who like it

Enjoyed the process. Drying chilies,large cucumbers,guvar beans etc was a lovely summer activity. And these were called “kachlies” fried and eaten. Yum
