Made them today, they are addictively chewy! The texture reminds me of tteokbokki, which I also love. I had to tweak the recipe a little bit, so a pro tip: if your noodles are falling apart/cracking while rolling/forming, add more water and knead the dough in your hand longer. The starch to water ratio will depend on the variety of potato you choose. It took a few tries but I found the right consistency after around 3 noodles. I really recommend this recipe, it's soooo delicious!

@@Jasmine-ir5lz idk what she said, but I used potato starch and can assure you it works perfectly fine with potato starch. Try it again with potato starch :) Also don't get discouraged if it is too crumbly, just add more water.

2nd attempt much more successful! Still needs some practice, but very happy I got chewy noodles. Amount of starch is a not clear because 400gr is alot more than 2 cups. Thanks for all the fun
