Spicy Tomato Relish perfect tasty accompaniment for meats, poultry and fish. Dollop it in your stews or on your burgers. Make the most of an over abundant Tomato crop. Gluten and Fat free. We do hope you give it a try.
INGREDIENTS:
1.5kg tomatoes
400g onion
1T mustard powder
1T Curry Powder
2T Brown Sugar
20g salt
2 chillis
pepper to taste
400g Vinegar

Great simple recipe. Thank you for this! My father is growing huge tomatoes at the moment and he's always bringing me up some of them. This is a perfect way to use them up.

Thanks Angie. I put it on really thick 'cos I like the spice but if its spread thin its not nearly as hot. Sometimes I just flick fresh avocado chunks thru and dip corn chips, its really yummy. Oh wow I haven't shown a Burrito Recipe yet. What was I thinking, thanks for the reminder ;-)) Next one I make will have this on it. Glad you liked the recipe, Thanks a bunch for watching. ;-))

Thank you very much Sandra. We do have lots of tomatoes recipes, tomato paste, passatta, semi dried, chopped tomato salad, ketchup, pizza sauce plus lots of tomato based recipes like soups, bolognaise, lasagna and included in many other recipes as well. Tomatoes can be chopped and frozen for later use in stews and casseroles. We lost our garden, all my camera gear, lighting and computers, and half the house in recent floods. It will be sometime before I’m in a position to resume uploading to my channel as there is so much rebuilding and recovering from the flood to be done. I hope you can bear with me until I am able to return to my creating for my viewers. I thank you for your kind message and support. Thanks for watching.;-))

Roll out scone mix ,spread on relish and grated cheese, roll up and cut into 1 inch scrolls and bake as normal in hot oven.

Can I use mustard seeds instead of powder , if so how much mustard seeds do I use ? 🙏

Is it safe to drop the vinegar content? I followed the recipe and after 6 weeks it's still too vinegary for me.

Thanks for the enquiry Melissa, you can drop the vinegar content by up to about 15% without affecting the keeping qualities. Another way is to increase the sugar content which will balance out the vinegar flavour. Don’t over do it because it will be too sweet, pickles, chutneys and relishes all share the unique properties of enhancing the flavours of foods, be it meats, cheese, dried fruits, nuts,crackers, breads or part of a cold cut or small goods platter. I have been known to mix it with a little mayo or sour cream for a lovely creamy sauce on crusty bread rolls or a spicy crispy fish fillet. That might work for you to mellow out the ‘bite’ of the vinegar. I hope that helps and thank you for watching and your question.;-))

+Tracy Douglass thank you for your enquiry Tracy. 400g equates to 400mls or 0.4 of a litre there are 250mls in a cup measurement here in Australia so you would be looking at roughly one and two thirds cups of vinegar. We actually have a handy conversion chart in this channel for weights, measures, volume and temperature. Unopened in a cool dark place, it will last a year or more. Once opened I store it in the fridge and use it within 2-3 weeks. I like to use several smaller jars, rather than large preserve jars so I always have some on hand for picnics, cold cuts, swirled into an omelette, top it on pizzas, bruschetta or for adding that extra flavour punch and richness to soups, casseroles or gravies. Such a versatile preserve, smeared on toast then topped with grilled cheese as a snack or accompaniment for soups. I know you are going to love this relish, it makes great gifts for family and friends too. Thanks for the question and for watching.;-))

It looked as though you were using pre-used jars - I was hoping to do the same but wasn’t sure how they would go in the oven. How do you sterilize the lids?

They are pre used. You can steam them over hot water, used them straight hot from a dishwasher. Pop them In an air fryer for a few minutes(my personal favourite) quick and easy. You can soak them in baby bottle sterilising solution or you can buy a microwave baby bottle steriliser, the brand is something like advent or scent I think and that is very quick. I picked up mine from a garage sale, cheap but I usually do a lot of preserving so I can justify using it. If using dry heat, oven, air fryer etc, take care not to overdo it it as the plastic? Sealing liner with burn or bubble and ruin your sealing ability. Hope that helps and thanks for watching. Hope you’re enjoying your weekend.;-))

You are very welcome. We are always here to help. I can’t see the point in preserving food to save money and then paying $1+ for a jar to put it in. So many bottles and jars end up in landfill that are just perfect for preserving. I’ve been recycling long before it became trendy. Sometimes I will buy a product because I like the shape or style of the jar to gift with home made goodies in it, or just to reuse myself. That’s just a little something I do for the planet. 🌎
