Recipe for: Spinach with rice in the oven with fluffy topping
NECESSARY PRODUCTS:
Fresh spinach - 400 g (washed and dried)
rice - 500 gr.
carrots - 1 pc.
fresh onion - 2 ties.
vegetable broth (cube) - 1 pc.
yogurt - 600 g.
eggs - 2 pcs.
flour - 3 tbsp.
baking soda - 1 tsp.
salt to taste
pepper
oil
METHOD OF PREPARATION:
Finely chop the fresh onion. Grate carrots on a coarse grater. Pour a little oil into a heated saucepan and add the grated carrot. Fry for 2 minutes. Add the green onions and fry again for a short time. Add the spinach and simmer under a lid until it settles, stirring occasionally. Add the rice and season with salt and pepper.
Transfer the mixture to a baking tray. Crush the vegetable broth on top. Add 1.5 liters of water and mix gently.
Bake in a preheated oven at 180 degrees with a fan, in the middle of the oven, for about 40-50 minutes.
Prepare the topping by mixing the yoghurt, eggs, pinch of salt, baking soda and flour in a bowl. Beat well with a wire whisk.
Pour the topping over the dish and return to the oven for another 15-20 minutes, until golden brown.
