Made this for dinner tonight and it was PERFECT!! Used vegetable broth as i didn't have sweet sherry on hand, but i just loved it. Also a nice way to sneak in veggies for the toddlers. Doesn't need much seasoning as the prosciutto is salty enough...i will definitely keep this one in rotation!
Oh I know I miss it too! That poor channel! I just haven't had any time to keep it up, and then our drought here in So Cal has made it even more challenging! But we are having such a rainy season this winter (YAY!) that it may just make it more feasible to start it back up!
I made this and keep coming back to this recipe!! i just substitute the sherry with beef stock, super delicious. I also sometimes put a tablespoon of dijon mustard in the sauce for a little more flavor :)
I can be super picky in regards to pasta recipes because I dont like anything too cheesy or too tomatoe-y so this is definitely a pasta dish I can get behind 😍😍

It just occurred to me that while I might have mushrooms in the fridge often, I probably would need to go out and buy shiitake mushrooms to make this! As always, amazing video!!! X
This looks amazing! I’m going to try making it using dairy free butter substitute; I’ll also omit the heavy cream. It looks like it’d be delicious but my stomach couldn’t take it as is.

You could try the shrimp, but I actually think chicken may pair better with the mushrooms and sherry :) You could use rotisserie chicken, already cooked, and just add to the sauce to reheat it before tossing with the pasta. Or you could cut up some chicken breast and sauté it in 1 tbsp butter and 1 tbsp olive oil, season with salt and pepper and cook until cooked through.Then set aside until the sauce is done, and then add it back in before tossing :)

Sure you could do diced eggplant instead of the mushrooms. I bet that would create the same type of "meatiness" as the mushrooms and still provide that earthiness that goes well with the sherry :) Hope you enjoy!
You could also use crispy bacon, or if you'd like to go meatless, you could add 1 more veggie, I would throw in some fresh baby spinach, to wilt just as you are heating the last steps of the pasta. When you combine it with the sauce. It won't take but a minute or two to wilt. Hope you enjoy!
