Thanks for watching: In this video I share with you the Spyderco Spydiechef. Spyderco has quickly become my favorite knife company. I thought the Spydiechef would be a great addition to my EDC collection. After getting my hands on this knife, I think this better suited for food prep. My father always told me to use the right tool for any job. The Spydiechef is a specialist built for a limited scope of work.

I subscribed. I think this is great honestly review and you touched on all the points I was concerned about. I really agree/or wish the blade was longer I'm living in my van so space is a premium and was thinking this could be great compact option for all my cooking needs not edc so it's probably just to short for what Im looking for.

Another great video George. I have a Spidiechef and love it. I have way too many knives but this is one of my favorites. Great blade steel and titanium frame with a good action and design. Just a great knife even at $230. If you like the look of this knife, don't hesitate and just get it. This knife will not disappoint.

I've had my spydiechef for about 3 years now and still edc it almost every day and use it for eating food or preparing food every chance I get. I haven't purchased a single other knife since I got it because I can't find a good reason to do so.

Spydiechef is an absolutely underrated folder. I have mine sharpened to a 15 degree edge and its an absolute laser.

Love this knife for quick Lunch Prep at work, Cycling, Hiking or cutting up Fast Food away from home (McDonald's plastic knife is terrible cutting up their breakfast pancakes). I think I'm gonna replace it with a larger, Quiet Carry Drift L in VANAX when it comes back in stock, though. I love being able to cut-up: Apples, Lemons, Pineapple slices, Pears, Strawberrys and other acidic foods w/o worrying about corrosion.

LC200N is the perfect EDC steel. Breaks the knife steel dilemma. It used to be that between hardness, toughness, and corrosion resistance you could pick two. LC200N is immune to rusting while having a good toughness and hardness for edge retention. The downside with spydiechef is the blade shape is less than ideal for EDC. Have it reground for a bit more of a usable tip. Once the PM 2 is available in this steel...

Ay man try out the siren designed by lance Clinton. I was feeling the same way about the blade shape of the chef, but the siren is perfect for edc for me. Lc200n is really a miracle lol

Again, great video. The spydiechef has been my lunchbox knife going on 3 years. However, it hasn’t seen much use since COVID and working from home now. Thanks to your video, you reminded me that it was in my lunchbox and it’s now in my knife block in the kitchen. It was in the low $200s when I bought it though. The price is because of the limited production of the steel. The steel is “rust proof”. For cleaning, just hit it with a high pressure hose, dry it off and frog lube the pivot. Since I use it for food prep, the frog lube is food safe, unlike wd40 or most other lubes.

When you say frog lube the pivot, how do you mean exactly? Are you disemmbling the knife? and if not how are you getting to the pivot

@@keithbeckett1349No need to disassemble. Open the knife. Hold the lock bar back so the blade swings freely and with the blade facing up towards your face spray a couple of squirts on both sides of the inside of the pivot. Then work the blade open and closed for about 10 or 20 ficks and wipe off the excess lube. Frog lube is food grade, so it won’t make you sick if it gets ingested.

Great review. Although this knife had what is considered a frame lock, not a liner lock. I prefer frame locks as I feel they are easier to actuate without having to look for it and while gripping the handle you actually providing resistance to the lock from moving. Some Liner locks I have had worn over time and not retained their stiffness. Frame locks are better for me.

Just a tip, it is intended that you start with the tip at 70-90 degrees from the chopping board and roll the blade onto the food you are chopping

George, I have one. I have realized I spend more time cutting food related things like sandwiches, fruits, bbq, catchup packets etc than actually any cardboard ... I eat everyday :) I don’t get boxes everyday. When I saw that one, I realized that this is the type of EDC for me.

I love this knife for the asthetics of it...also the designer is rad! Ive worked in the restaurant industry for 30 years, so when this came out, I was super excited to be able to have a pocket 'chef knife'...Especially from my second favorite knife company! Having said that...On paper, everything about this knife seemed it would be right up my ally. But, using it in the field as it were, I found that it wasnt too practical, and kept going back to my more traditional chef knives. I do still love the spydiechef and ill keep it forever, but lets just say...that it does a much better job at opening the bag of Chives, than rolling ithrough them... heh

This was a grail knife for me for a long time, and I finally got one recently (the newer CQI version). I really like this knife, but I do have 2 nitpicks; For ME personally, it's a bit painful to one hand close this knife because the tang of the blade is sharp, and it rubs my finger on it's way closed (again, only when I one-hand close it). Second, I find the hole placement to be a little awkward, and I also find it to be a bit small. Overall, I think this knife is quite beautiful (I know I'm in the minority), and it's definitely one of my favorite carry knives. As a side note, while I really like the black hardware on the CQI version, I would LOVE to find some blue accent hardware for this. The name is a bit unfortunate, because it directly colors people perceptions and expectations of the knife. Despite the name, it is not meant to be used PRIMARILY in the kitchen, nor is it meant to be used PRIMARLIY for food prep (who would design a folder specifically for food prep, it doesn't even make sense). The name is merely a nod to the fact that it takes DESIGN CUES from a chef knife. Direct quote from Spyderco's website; "the Spydiechef is an extremely refined folding knife that takes the user-friendly ergonomics and balance of a world-class chef’s knife and translates them into an all-purpose, everyday-carry folder..." It is meant to be an EDC knife, and it just happens to excel at food prep because of the fact that it was inspired by a chef knife.

9:40 that's a frame lock, my dude. I love my Spydiechef but I wish Is had an over-travel stopper and a ceramic end piece to the lock bar at a similar HRC to the blade.

Emerson came out with a great folder steak knife, and what do you know? its sold out, I have this knife but I lost it, but looking back at this I think it would make a great steak knife for when i go out with the misses and pull out my knife instead of using their cheap ass dull knives.

Thanks George for the review. I don't think anyone else has done this type of comparison. Not sure it would be a great food prep knife. Yes the blade contour suggests it but not replacing my Japanese kitchen knives anytime soon. It is just too small except for use as a paring knife. And even a cheap Chinese knife is more versatile. Cleaning out a fixed blade knife is also easier than a folder. Great looking knife but not for the kitchen day to day. It would have been great to see a comparison with a kitchen knife so we can see whether that affected your technique at all. I can tell the knife is too small for you on bigger tasks.

I would have to disagree with most of what your saying, all coming from personal experience. Obviously its no replacement for a full size chefs knife, but the handle and blade are set up so you place your knuckles flat on a board and the blade touches the board. It works incredibly well for most food prep, especially in an everyday setting. Ive literally prepped entire meals from start to finish with one and wouldnt have changed a thing.

It is actually a frame lock per definition, not a liner lock. And quite limited in uses IMHO. I wonder if it will stay in the line for long.

you're definitely a unique guy. I'd advise you to save some money and get a real kitchen knife, the kind that someone into kitchen knives would get, not something the EDC bro man children would suggest. Obviously you live in the us, so what I'd suggest for your first knife would be to get on cutlery and more and get something like Yaxell, a Shun, a Tojiro or even a Suncraft, more of their stuff is being sold in the US these days too. Any of those will be in another universe from whatever you're used to but even those are in another universe from a real high performance kitchen knife, something like Takamura R2 or Kobayashi SG2 which are true high performance kitchen knives but in the more budget friendly range. Dollar for dollar good luck to find anything higher performance than either of those.
