To have worked in his kitchen must’ve been a terrifying dream come true. Wish I could’ve been there. Blanchet and Trotter, their influence should never be forgotten by today’s American cooks and chefs.

The mid 90’s is when I first seen this and these episodes of this master chef, it looks absolutely delicious then and even more delicious now in 2018.

I will never forget the first time I saw him using an electric knife in the kitchen, I was like....my grandma carved the turkey with that. (I didn't actually say it out loud because I didn't want to get a slap in the head) RIP Chef and thank you for the knowledge.

You don't get portion like this anymore in todays fine dining restaurants, which is sad.

Of course you do, this is an a la carte dish, if you order a main course a la carte in today's restaurant you will get the same portion.
