Can't answer the sensitivity question but in case you don't know you can use wasd to control almost all vehicle turrets. That way your sensitivity can be a lot lower for fine adjustments.
4:58 you should have had driver switch to command seat right then- and used frags instead of heat, because frag has wider kill radius for infantry, otherwise you have some ridiculous shots lol
