Amazing dish. Squash risotto is my favourite risotto (I grew up in Italy) and the idea of roasting the squash in the oven is genius! I love your videos, The shooting, the choice of props, the lighting, the amazing vegan dishes and the beautiful presentation, everything is so perfect and so beautiful. Thank you ❤️🙏

I tried this! I had a butternut squash from my garden and the risotto. So I used them for lunch today. I roasted the squash and a whole head of garlic, although I didn't put that much in the risotto . . . I even fried up some sage leaves. Because I'm not vegan I added a couple spoonfuls of Parmesan cheese. Very easy and delicious recipe~ bit time consuming though. However, now I have squash in my freezer to make prep easier for next time!

well, I love your channel too ! I love this calm and chilling atmosphere, that you're not rushing through the cooking, the rustic guy kitchen -- and of course (!!): the quality of your recipes and editing! ...and I also love (beside this shirt and jeans!!! :D) that you do food and not preaching on veganism - at least not that I've noticed so far :) ♥ and you did say white wine perfectly, even 3 times ;)

I made this risotto, without the nutritional yeast and was incredibly tasty. I'm not vegan, however I don't eat dairy products. Will definitely be making it again!

Just made it... Was awesome. I left out the aubergine bacon as I couldn't get it to go crispy last time I tried it with the breakfast... It either burnt or was soggy. Was still epic without it!

You just CARAMELIZED my heart with your lovely vibe. Kinda lost me at the white whine part though but i will try it without the whine and i hope it will be good It looks so simple to make delicious vegan food when you do it.. it just needs to have a glaze, you have to give it a good stir, and probably most importantly there needs to be some caramelization going on. It;s hard to not eat fried food all the time if i keep watching your videos. Thank you for being such a lovely person!

Beautiful content ! Instead of the pumpkin seeds that you mentioned at the end you can use the butternut seeds. You can roast them until they are crispy in the oven with some seasoning. Super tasty :)
