Sri Lankan Wedding Cake [No Alcohol]

Quick Method, no alcohol, no marinating, no egg almond icing and still bake a juicy #srilankanweddingcake. This is the same Sri Lankan fruit cake also known as 'Rich Cake' or 'Fruit Cake' used as Christmas cake.
Easiest way to make everyone's favorite treat, the Sri Lankan wedding cake!
Sri Lanka wedding cake is a pricy treat reserved for two major special occasions in Sri Lanka; Weddings and Christmas. Sometimes it can be made to celebrate a wedding anniversary too. Some couples would save a few pieces of their wedding cake to have on their 1st wedding anniversary! This cake is a contribution by the Burgher community to Sri Lankan cuisine. Often, the Burghers are credited with making the best Sri Lankan fruit cake and many other Euro-Asian foods. This cake too comes from my Dutch-Burgher family and have been passed around by many family and extended family.
In this recipe for Sri Lankan Wedding Cake, I have left out the spices such as All Spice, clove powder and reduced the cinnamon powder to make it less of a Christmas cake and more like a wedding cake. I have also substituted pumpkin preserves, chow chow, sultanas, golden syrup etc which are typical ingredients available in Sri Lanka for this exotic wedding cake which is also called Rich Cake and Fruit Cake.
In this video I have shared everything I learned from years of baking and from my mother's recipes. Your wedding cake will surely come out fantastic if you follow these tips shown in this video and in my Sri Lankan Christmas cake recipe videos ‪@AasaiRasaiRecipes‬ .
Tips:
*Use dried fruit and nuts that are locally available to you.
*If using raisins, avoid sultanas as it makes the cake sour.
*Golden syrup can be substituted with Maple Syrup or any sweet syrup.
*Pumpkin preserves can be substituted with dried or candied pineapple.
*To substitute chow chow, increase the quantity of cherries and other fruit.
*To line the cake pan, use thick brown paper and foil (as shown in this video) instead of parchment paper and oil/wax paper.
*Substitute butter with margarine if needed
*If the cake mixture is dry, add a little milk to make it the right consistency
*Due to the prolonged bake time, the cake must have enough moisture. If the cake mixture is too firm before baking, it will turn out dry and crusty when baked.
*Chop the fruit in a blender to reduce prep time

Sri Lankan Wedding Cake Recipe

Makes 6 lb (about 3kg)
Ingredients:
16 oz finely ground raw Cashews
16 oz Glace Cherries (Candied Cherries)
8 oz raisins
6-8 oz dried pineapple (or candied pineapple)
6 oz crystallized Ginger (Ginger preserves)
10 oz Candied Peel (finely chopped)
6oz sweet Orange Marmalade
6oz Strawberry Jam (or any desired flavor)
14 oz very fine Semolina (plus 2 tablespoons self-raising flour is optional)
6 oz white Sugar
3-4 oz Maple Syrup (or Golden Syrup)
1 tablespoon Bees Honey
8 oz butter (melted)
8 large eggs (whites and yolks)
2 teaspoons ground Nutmeg, 1 tablespoon ground Cinnamon, 3 tablespoons Almond Extract & 2 oz Rose Water
For Marzipan (Icing)
Powdered Sugar
Finely ground Cashews (or blanched Almonds/Almond meal)
Rose Water & Almond Extract
Method:
1) Into a bowl add all the ingredients except sugar, eggs, butter and semolina. Mix well.
2) Beat the eggs and sugar until sugar is dissolved
3)Melt the butter
4)Mix the melted butter into the cake mixture
5)Add the egg & sugar mixture into the cake mixture. Mix very well.
6) Line the cake pan with 2 sheets of thick brown paper. Place two sheets of foil on top of the brown paper.
7)Pour the cake mixture into the prepared cake pan and spread evenly
8)Bake in preheated oven at 300F until done. Do toothpick test to confirm.
For Marzipan:
All the ingredients and form a soft, non-sticky dough-like mixture. Add more ground cashews than powdered sugar. Taste for desired sweetness.

Always loved your recipes! This can be kept for a year without alcohol? How to store it, room temperature ok or needs to be refrigerated? Also can please share the measurement for the marzipan? Can i also store the cake covered with marzipan?

Thank you! It means a lot to me ❤️. This cake can be kept for a year or longer at room temperature and always in a cool, dry, and dark place; like inside a light-proof container or in a cabinet. There is enough sugar to preserve it, so even without alcohol it will be fine. I did not measure the icing, sorry. Usually, I mix equal parts almond meal & icing sugar, 1 teaspoon Almond Extract and 2 tablespoons rose water. As I keep mixing it into a paste I will add more of the rose water or Almond meal or icing sugar to adjust the flavor and texture. It should be firm enough like a dough to be able to roll it out. Hope this helps.

Hi! sorry got one more question. if i want to half the recipe just to try out first, what size pan do u recommend? I always prefer those perfect square ones. Thanks

Hi again. Thanks for your question, and no apologies needed. An 8x8 or 9x9 inch with a height of around 2 inches will work for half the quantity.
